This is how I make potato soup:
     Saute a diced onion and a rib of celery in butter in a big pot.
     Add diced potatoes with enough water to just cover the potatoes.
     When the potatoes are cooked, don't drain them. Use a potato masher to smash some of them (like maybe 10 light passes through the potatoes with the masher).
     Dump a pint of sour cream (light or fat-free) into the potatoes and stir it all together. The water you left in the pot dilutes the sour cream so that it has the consistency of a creamy soup or chowder).
      Add salt and pepper to taste.

      To serve, ladle into bowls and top with shredded yellow cheddar cheese and grated raw carrots. (A little color and texture).

This recipe is great "as-is" but I also make changes to make it more of a potato soup..

2 Cup boiling water

2 Cup milk

Add potatoes, carrots, onion, salt & pepper to boiling water. Cover & simmer 10 min.
Do NOT drain. Make white sauce with margarine, flour & milk; add cheese & stir till
melted. Add ham & undrained vegetables. Heat. Do NOT boil.


For a more typical potato soup.. I do not put in the cheese to the sauce or the ham.

I add basil and garlic (and whatever other spices strike my fancy at times) and corn to the finished soup.

Those that want it cheesy may add shredded cheese to their bowl.

as long as you pile on the crunchy bacon on top at serving time, any kind of potato soup will do (for me anyway).

I have to admit potato soup is one of my favorite foods.

I also don't measure when I cook so I can tell you what I put it my soup but not precise measurements.
Garlic powder,1 onion finely chopped, 1 stalk celery (or a couple of shakes of dry celery seed) 1 carton of low sodium chicken stock, potatoes, and milk (use 2% or whole) First I put the potatoes in the microwave while I get the stock and all the seasonings simmering on the stove. You can add any hambone/ham/bacon etc that you have. When the potatoes are done I cut the potato in half and scoop out the potato into the pot. I cook everything but the milk - While stirring I chop the potatoes with the spoon or us a masher or sometimes the immersion blender if I don't feel like chopping the onions small(if I do this I hold out some of the potatoes for "chunk"). This should taste yummy with out the milk! If not adjust your seasoning - add salt/pepper.
- I then add enough milk to make it look all white when you stir. The starch from the potatoes thickens the soup. I usually turn the pot off and let the soup sit for about half an hour and it will thicken on it's own
