As the weather here has been in the high 70s/80s this week, I prefer not to heat up the house much, and I'm ready to switch to a summer meal plan. (Even though it's supposed to be back in the 50s for part of next week.)

So, I'm making my list:

-Hobos
*This is a recipe that my in-laws make. You put smoked sausage, cabbage, potatoes, corn, and salsa in a foil packet & grill it.
-Grilled steak (or chicken) salad
-Taco salad/7 layer mexican dip w/ chips
-Cheeseburgers & potato salad
-Hot dogs & baked beans
-Chicken salad sandwiches/wraps
-Pasta salads
-BBQ sandwiches (meat cooked in crockpot)
-Tacos

What goes into your summer meal rotation?

Ours is much the same - I also do grilled chicken breasts both as a meal and in advance. Day 2 I take the grilled chicken, dice it, combine with quick cook pasta and bottled Alfredo sauce for a quick meal.

That reminds me I need to get a new grill for this summer.

extra grilled chicken is SO versatile.. we slice it up for sandwich meat, or to top a salad (makes it a meal) or even just eat plain.. being pregnant it makes a great quick high protein bite when I need something NOW and can't really wait for the meal to be prepped/cooked.

I also use my electric roaster on the patio.. great way to cook enchiladas or a big pot of pinto beans.. (or a roast or a turkey or baked potatoes etc) without heating up the house.

For me though it's especially the beans.. because then I have those for burritos and tostadas and side dishes for other mexican foods.. I often serve beans with things that my kids don't really care for.. so I'll make fajitas for those that like them but have beans too so that those that don't care for fajitas can have bean burritos.

Also great side dish with bbq or to make up some homemade chili for topping hot dogs or the occational cold/wet summer day.

I make 6 pounds of beans.. then we have them as the meal that night.. and the rest gets saved in the fridge or if I know they'll be kept longer than a few days I'll freeze them.. but that gives me homemade beans that quickly heat up or can be mashed for refried beans etc.
