I'm just not thinking of a good menu for our lunch after the FHC in a few weeks. I've got a lot of restrictions:

Nothing with egg, dairy, or wheat.
I don't want to cook anything after I get back...want it ready to serve.

The ideas I have had so far:
lasagne trays and spaghetti (no)
baked ham (no, my sister is doing that this weekend)
cold cuts (no)
BBQ catering (overdone, so no)


Roasted chicken and rice is where I'm leaning...very standard here...but I know it and it can be ready. Salads and appetizers to accompany.

But I'd love to hear other ideas...I just need some inspiration.

WHen we had lots of people over, my mom made what we called el gando (which apparently means absolutely nothing and this dish is not authentic anything either). It is basically taco meat mixed with yellow rice and diced tomatoes. My mom would put it all in a pan and put more yellow rice on top with tomato wedges laid out on top, and it makes a pretty presentation that way.

Then, you use it to make taco salad buffet style. The only catch is that there is usually cheese and sour cream, but I didn't know if that might be okay since you don't have to use them.

My mom always used fritos, crushed, and if you put them first and then the meat, they stick well to the meat, and it is is pretty tasty, but you can use whatever corn chips you like. You could even have corn tortillas for the children to make wraps if they don't like lettuce/salad.

We make it sometimes for dinner with just plain rice, and it is good. You could always cook rice with turmeric To get the color without buying commercial yellow rice. Saffron is nice too but harder to find and $$

Along the salad bar buffet line of thinking, you could also grilled chicken breasts and/or flank steak ahead of time and slice them and serve them cold as a part of a salad bar spread. Then everyone could build their own grilled chicken or steak salad. These might typically include dairy and wheat options, but they could be kept seperate.

Chicken sounds great to me!
Maybe a meatball appetizer (if there's a recipe that fits your diet restrictions)

another option- coldcut tray to make own sandwiches

You could even serve the chicken with several options- chicken sandwiches, chicken/rice fajitas, chicken salad

Just thinking to Sebastian's baptism party recently, I had some dishes for the no wheat, egg and dairy crowd.

Chicken wings (made own marinade) served cold.
vegie sticks and homemade dip.
Sure I had more but can't remember at the moment.

and serving with rice and salad, not sure if you want to have nothing in those categories or if you're ok with having options that some people can't have.

I could never serve BBQ or tomato sauce at a FHC buffet!
All those white clothes!?!?! Jodie, your kids must be very tidy eaters.
