I am getting a bit desperate...I need a go-to list for lunches that do not include wheat. I go shopping and things disappear so very fast that I am losing my place and my touch around here. Help me take back the kitchen! I need ideas for lunch that will help me provide and keep on schoolin!!

any GAPS ideas would be welcome too...I have several of those here too...

tacos? or a wrap made with corn tortillas instead of flour tortillas?

leftover meats make good tacos.. add some salsa and veggies and cheese (if you can have cheese)..

something made with rice? or salads? like if I can grill extra chicken.. then toss it in the fridge.. I can slice it and either heat it up with some veggies to go on rice.. or eat it cold with extra veggies, maybe some cheese on a salad.

omelets? with leftover ham I've been contemplating omelets for meals other than breakfast.. yummy ham and cheese omelets.. or go a bit chinese and think egg foo yung.. with the veggies mixed in and a sauce to pour over it.

I do relate, one of the areas I've struggled with since going grain free.

Some ideas; Big platter of vegie sticks and dips. You could add corn chips too.

Once a week I cook corned beef (put it on at morning tea time) and salad and we have a sit down lunch.

Salads, lots of salads, just prepare a few in different ways. ie. one day we may have potato salad with green salad, another I'll add boiled eggs.

oh yes, salads get "boring" if you always add everything you can to them. If you change it up and use fewer items for a particular flavor you can get lots of variety. Like a green salad with oranges, onions and olives will give a very different taste than one made with dried cranberries, feta cheese, and walnuts. Don't forget coleslaws.. and you can even do some without using lettuce as the base.. like a mix of chopped up cucumbers, tomatoes, cheese chunks, onions with an italian dressing or something like that.

my kids love hamburgers with brown gravy and mashed potatoes.. I think they eat more of those than the hamburgers on buns

My friend once gave me this recipe for "Cowboy Caviar", and it seemed to fit here. It's one of our favorites!

1 can black beans
1 can red beans
1 can pinto beans
1 can hominy
fresh tomato, diced
fresh avocado, diced
onion, diced
optional: small can chopped green chilis

Drain all the beans and toss all ingredients together in a big bowl with Italian dressing to taste.

You can vary the types of beans and amounts of things easily according to your family's preferences and what's available or on sale.

You can just eat this with a spoon as a cold salad, or, we like to eat it with corn chips. It would also be a great filling for corn tortillas.

Now I'm hungry, and I'm going to add all these ingredients to dh's shopping list!

I have been toying with getting a really good blender like a Vitamix or a Blendtec. I know they are expensive but I might be able to use a gift certificate towards the purchase. I have to figure out a way to streamline meal production around here so I don't get burnt out with all of the meal prep and clean up and laundry, and toddler chasing, and ..... YKWIM??

I'm coming back to share one more, since this is what I came up with for a quick dinner for ds and I tonight. I took pieces of turkey lunch meat, spread cream cheese on one end, and rolled them up with a pickle spear inside. I've had them before with ham, and think that tastes better, but turkey was all we had and we liked it just fine, despite ds's initial skepticism!
