Other than the obvious guacamole...does anyone have any ideas how to use up some avocados?

Avocado, cheddar cheese, sprouts, tomato, and mayo sandwich. Add bacon - yum!
I'm running out the door to baseball...will try to come back and add links to some fave recipes.

I recently tried an avocado omelet, and it was AWESOME. Even dh said that it was good and he doesn't usually eat avocados.

on sandwiches is wonderful.. I like it with turkey and lettuce and mayo on a croissant.
Or roast beef and provelone on sour dough with avocado and lettuce and tomato and ranch dressing.
chop it up to add on top of a green salad.. or a pasta salad.

LOVE Avocado!!!
We eat them sliced on sandwiches - they work well with bacon, any meat, tomatoes, sprouts, fresh sliced mozarella...which is I think what Angie suggested! Seriously, they're a wonderful complement on just about any sandwich! That roast beef/provolone on sourdough that Jodie mentioned sounds delish!!!
I like eating them right out of the avocado shell! Slice them up, sprinkle liberally with red wine vinegar, salt, red pepper flakes, and tabasco. I like spicy though...a toned down version of this would be red wine vinegar, salt, and fresh ground black pepper. This simple sliced avocado salad is one of my favorite lunches along with a smoky bacon topped homemade mac and cheese that is just HEAVENLY!
They are so wonderful on any salad, but seem to complement shrimp so nicely! Love them sliced with shrimp salad served on a bed of buttercrunch lettuce!

avocado-grapefruit salad
have you tried an avocado shake/smoothie? yum yum yum!!!
avocado mayonnaise -- with garlic if you like garlic -- like an avocado aioli -- so good on grilled/baked fish.
love them in sandwiches too!
in sushi. when we're lazy, we just cut it up and dip in some soy sauce and eat with rice.
to top a spicy black bean soup or any mexican soup.
my fave avocado salad is avocado-shrimp-mango -- the avocado can be chopped or made into the mayo i mentioned above -- or switch it up by making mango mayonnaise instead.
oh, and i almost forgot, cobb salad! avocado, eggs, lettuce, tomato, ham cubes, turkey or chicken cubes, dried cranberries, walnuts, red onion, anything you can think of really.

I have added to wraps/sandwiches before, but never thought about adding bacon!!
All the salad ideas are great, and my hubby will love your spicy version Jen!

I love Mexican avocado soup! I'd add another diced avocado...they are my favorite part of this tasty soup!

My daughter and I love avocados. The boys won't touch them though! We eat them plain, in salads, sandwiches, etc. I also really love the Wholly Guacamole you can purchase in the produce section of the store. It keeps really well and can be frozen. I was surprised it tasted the same after being defrosted.

I like to mix them in my scrambled eggs, although it does change the color a bit.
The best part of avocados is sprouting the seed in water! It's such an easy experiment, with gratifying results!
