Hi Gla s! I am really wanting to make a brownie for our ladies night this friday . I would love a very moist chewy brownie . I only have cocoa not chocolate in bar form can cocoa be subsituted ? I'm on a budget so I'd like to use up the cocoa
recipes please

These are called
Indian Nut Bars
Extremely moist and rich. They are chewy, but not the exact same texture as a box brownie.
This was our family's brownie recipe. Still a favorite
1 cup butter or margarine, melted
2 cups sugar
1/2 cup cocoa
4 eggs, slightly beaten
1 cup flour, sifted
2 teaspoons vanilla
1 cup chopped nuts (optional)
Melt butter and pour into sugar. Stir well and add cocoa and vanilla. Stir well. Add eggs. Stir well. Add flour, 1/3 cup at a time, stirring between. Add nuts. Pour into greased 9 x 12 inch pan. Bake in 350 degree F. oven (325 degree F for glass pan) for 25 to 30 minutes.
Optional: cut and roll in confectioner's sugar while still warm.
The only tweak I might make is add a pinch of salt or baking soda...just a pinch.

If you add Ghiradelli's milk chocolate chips to the batter and maybe a handful of the dark ones...watch out! You may become addicted. ...I'm just saying...

This is our brownie recipe it is slightly different.but ooh sooo yummy. We often cut back a bit on the sugar and add peppermint extract or almond extract....or Kahlua or amaretto....sigh! During the summer we make them underdone and cut them in bite sized pieces and slide them in the freezer...fudge heaven, I tell you!
Oh! And don't forget to add your fav chocolate chips!!
Fudgy Cocoa Brownies:
Ingredients
* 1 cup butter or margarine
* 1 cup Premium Cocoa
* 2 cup granulated sugar
* 4 eggs
* 2 tsp vanilla extract
* 1 cup all-purpose flour
* 1/2 tsp salt
* 1 cup nuts, chopped or Chocolate (optional)
Instructions:
Preheat oven to 350°F. Grease one 8-inch square baking pan.
In a medium saucepan melt butter over low heat (or melt in microwave in a one-quart container).
Remove melted butter from heat, add cocoa, and stir until well-blended. Add sugar and mix well.
Add eggs, one at a time, beating well after each addition.
Stir in vanilla, flour and salt. DO NOT OVERBEAT. Fold in nuts.
Spread in prepared pan and bake 25 to 30 minutes, or until wooden toothpick tests done.
Enjoy!

Ok These were great ! the recipe is recipe card worthy
I did think as I ate it I would add 1/2c more cocoa or dark chocolate chunks for myself and my kids do not like walnuts but I love love brownies with walnuts . So next batch is a batch for Mum

That is what I thought. My dd's are willing to make a batch both ways and test the results just to make sure their taste buds have the best experience. hmmm...I think I will have to supervise, don't you think??

These were delicious, Jenn!
We used 3/4 cup of cocoa and added 1/2 cup Ghirardelli milk chocolate chips to the batter (because that's all we had...we would have put in more if someone hadn't already found the bag and devoured it). We hope to try it again with 1/2 cup of coffee added...and more Ghirardelli chocolate chips.
Thank you for sharing this recipe! Definitely a keeper! My dh prefers these to the Ghirardelli brownie mix we usually get from Costco!

I have the ULTIMATE chocolate chewy brownie. Sorry, all others cannot compete. It is really really good! Especially the next day- wow!
