I'm headed to the Farmers Market this week, probably for the last time. I'm hoping to get a bunch of apples. My family loves cooked apples. Does anyone know if I can freeze them? (I make them by simply cooking sliced apples with butter and brown sugar.)
Also, we have been blessed with tons of winter squash. It is butternut and buttercup. I would like to cook and freeze it but I'm not sure of the best way to do that. Suggestions?

You ought to be able to freeze your apples that way; I froze applesauce last year and it was fine.
You *can* cook and freeze winter squash, but it is much, much easier just to store it like it is, some place cool and dry. We've had squashes last into spring.

I freeze apples sliced and raw after being dipped in water with lemon and sugar in it to keep them from discoloring. Then I can pull them out and make them into anything I want.. cooked apples, apple crisp, apple pie etc.

Any tips for cooking/freezing a butternut squash?
I bought one for the first time over the weekend, and I'm guessing it was a huge one! I prepared about 1/4 of it with some other veggies that I roasted last night. Planning to use those leftovers pureed for a soup today. My cousin sent me a recipe for a soup that freezes well, but I'm the only one who seems to like my soups in this house, so I don't want to have a lot in the freezer. What cooking method would you suggest?

We just ate leftover butternut squash last night from the freezer. It was cooked with butter and brown sugar and the consistancy of mashed potatoes. I was amazed how good it tasted after being frozen-I need to trust my mom more She froze it when we had it leftover a few months ago.

You can also freeze apples already "seasoned": sliced then tossed with lemon juice, sugar, cinnamon. That way they're ready to go into a pie or whatever.

What I have done with our butternut squash is cut it in half, scoop out the seeds, put it cut side down in a cake pan, add a little water (about 1/4 inch in the bottom of the pan) cover with foil and bake at 350 until it's soft (45 min ? - I didn't keep track because I was doing other cooking at the same time.)
Then I just scooped it out and mashed it and put it in freezer bags.
I served some with butter and brown sugar mixed into it before freezing and it was yummy.
My kids like it better in cubes, but I'm not sure how it would freeze.
