Share with me your favorite uses and recipes, please! I love wheat berries and use them in side dishes and salads all the time, but need some new and fresh recipes. I've got pounds and pounds of wheat berries this year. I won't be making any bread with them because I don't have an adequate miller.

Have you tried Sue Gregg's blender batter recipes for muffins and pancakes? I haven't done it in a while, but they are very tasty and you can mix other grains with the wheat!

the only thing I've had off hand myself was when they're sprouted.. but only just barely.. and then you can eat them rather like nuts.. those were pretty good.

Very cool! I've never heard of her, but just spent a bit of time on her website; her recipes are fantastic (I wish she offered more recipes without having to buy a book , but she does have quite a few) ~ I'm definitely going to try her waffles and pancakes!

Blender pancakes
She calls for WAY too much salt though, so I'd cut that down to just a dash or so.

My husband who is of the firm mind that pancakes should come from a box, conceded that these were really good. No fancy blender needed either!

Thank you Melissa! I'll have to check this out. Pancakes are such a big thing 'round here; everyone loves them.

Likewise, here. My husband declares that "not everything has to be so earthy, Chris" ; he puts "Cheese-Its" on the grocery list, every week. . However, his heart truly appreciates the effort and toil put into eating with intention and purpose.

I'll share my favorite recipe ~ though I am still on the search to add all different types of uses for the wheat berry, to my recipe collection. This really is a good one:

Taken from Heidi Swanson's: Super Natural Cooking book, and tweaked just a bit to suit my own tastes.

Wheat Berry Salad

2 Cups soft wheat berries, rinsed
6 Cups water
2 Teaspoons, fine-grain sea salt, plus more as needed
Fine-grain sea salt and freshly ground pepper
3 generous handfuls spinach leaves, stemmed and well rinsed (I usually lightly chop up and saute in butter for a few minutes before adding it to the dish, but you don't have to).
1 Cup toasted pine nuts (I never add these)
1/2 Cup crumbled feta cheese (also can use mizithra instead of feta).
And I usually add a handful of shaved carrot.

Citrus Dressing
Grated zest and juice of 1 orange
1 Tablespoon freshly squeezed lemon juice
1 Tablespoon minced shallot (I also use green garlic)
1/2 Cup extra virgin olive oil

Combine the wheat berries, water and 2 teaspoons salt in a large saucepan over medium-high heat. Bring to a boil, lower the heat, and simmer, covered, until plump and chewy, about an hour or so. The berries should stay al dente, and the only way to be sure they're done is to taste a few. Drain and season to taste with more salt.

To make the dressing, combine the orange zest and juice, lemon juice, and shallot. Whisk in the olive oil and season with a few pinches of salt and a few grinds of pepper.

Toss the hot wheat berries with the spinach, pine nuts, shaved carrots (if you want), citrus dressing, then top with the feta (I usually toss with a pad of butter too). Taste for seasoning and sprinkle with a bit more salt if needed.

I usually don't dump all the dressing in at once, I add little by little until it's the way I like it. Too much will over-power the other flavors in the salad.

**I just wanted to add that I also added asparagus to this last night and it turned out delicious!**

About all I do with wheat berries is sprout them and then blend them with liquid for bread before adding to bread. it's good. I'll have to get more adventurous.

From King Arthur Whole Grains Baking Book, I make sprouted wheat berry bread. In fact, made it tonight, and it is hands down favorite. You put the bread liquid plus scant cup of sprouts in a blender, and then proceed with the bread making. I am guessing that this would work with other bread recipes with a little experimentation.

I'm going to have to give this a try, Michiel. I've never sprouted the wheat berries before, but just did a little research online and it seems completely effortless, which is great ! Just curious, what is your method of sprouting? I'd love a little tutorial to get me started and any advice from your experience.

First of all, I want to apologize for the double posting. I had forgotten that I posted before and really wasn't nagging.

I got a "kit" at the health food store, which was a glass jar with a screened lid. You can use a glass jar, cheese cloth and rubber band instead.

Measure out 1/4 cup wheat berries for one loaf of bread and cover completely in water in the jar. Let that sit overnight. Twice a day, drain and rinse the berries, and try to keep the jar tilted at an angle. I prop it screen down in the sink diagonally. IN about two days, your berries are sprouted.

Since I do this quite a bit, and it is my kids' favorite bread, I do more berries at a time and store extra in the fridge. The sprouted berries can be used for other things, of course and I think that sprouted berries are very nutritious.

It is important that you not skip the blending with the liquid step, because according to the recipe I have, if you don't, you'll have little rockes in your bread.

Here is the recipe from King Arthur Flour

Sprouted Wheat Sandwich Bread

3/4 c. sprouted wheat berries
1 c. lukewarm water
3 T. orange juice
2. T. butter
1 1/4 tsp. salt
2 T. honey
2 1/2 c. whole wheat flour
2/3 c. regular flour
1/2 c. rolled oats
2 tsp. instant yeast

Blend sprouts, water, and orange juice in blender. Combine everything to make dough. I just put it all in the bread machine. Let dough rise until doubled. Form loaf in 9 x5 loaf pan, let rise until one inch over the top. Bake at 350 for 40 minutes. You may need to tent with foil halfway through.

Nagging? Goodness, no! I didn't feel you were nagging at all. In fact, I'm glad that you double posted because I had let my wheat berry project slip into the category of I'll tackle this another time and just throw them all in the freezer! And I don't want to do that (again). I'm really the only one in my family that enjoys wheat berries as they are - being used for salads and side dishes (after being softened and plumped up in boiling water) and it didn't even occur to me that I could sprout them and use them for breads! Um, duh.

And I really appreciate you giving me the help on sprouting them, *and* then giving me a tried and true recipe to follow! Wonderful Thank you.
