we're having leftover chicken afritada (chicken stew made with onions, peppers, tomatoes and potatoes)

and making ahead: Korean-style sweet potato noodle stir-fry (chapchae) with leftover pork carnitas, broccoli, carrots and kamaboko (Japanese fish cake), for dh and dd's lunch tomorrow...

Sweet potato noodles sound fascinating (and tasty)!

I think I'm going to brown some meat and leftover brown rice and use some leftover tomato/vegetable gravy from a pot roast to make sloppy joes. And a salad with the baby greens popping up in our garden!

Doctors appointments, including an ear infection diagnosis scrubbed that plan, as I couldn't get it in on time, so we're having Kielbasa. Pot Roast will be tomorrow.

I need a nap...but that's not on the menu for today.

I think I'll do a casserole.. cook up some hamburger with cabbage and green beans and carrots and the like.. spread it in a pan and cover with a thinned biscuit dough (so it pours) and then bake it.

rather cold here so having the oven on and a nice completely hot dinner sounds lovely.

Me: "Ok...you can have either chicken, cow, or hog. What do you want?"


In other words...leftovers.

No. That was a bit deceptive, huh?
We did have cucumbers and they were freshly bought and sliced.

We planted about 20 cucumber plants and something got ahold of all but 4 of them. Squirrels have been awful around here. They tore up all my bell pepper plants.

We're having to plant more cucumber and bell pepper. Can't wait until those come in fresh.

Oh squirrels. I'm right with you. I can keep the rabbits out, but the squirrels are a complete nuisance. Broke my son's heart last year when we tried to plant corn and sunflowers. I tell you, those squirrels were POSSESSED!

We're going to try to get our garden in this weekend/next week. Of course, they are calling for 90 degree temps after a week of 60s.

Tried a new recipe which I thought was yummy. Braised Cabernet Chicken with roasted potatoes, spinach and salad. The recipe will probably turn up quite a few more times since the page got wet and now I can find it more easily!

Pampered Chef 29 minutes to dinner cookbook Vol 2. I am not very good at shortening the recipe, so I will type the whole thing.

3 slices Bacon
4 bone in skinless chicken thighs
salt and pepper
1 small onion
1 tbsp butter
2 pressed garlic cloves
2 tbsp flour
4 oz sliced white mushrooms
1 cup chicken broth
1 cup Cabernet Savignon (or Merlot)
1 tbsp Worcestershire sauce
1 tsp snipped fresh thyme leaves

-Slice bacon in 1 inch strips and cook until crispy. Set aside. Leave 1 tsp bacon drippings in pan.
-Season chicken with salt and pepper. Place in Deep Covered Baker: microwave on high for 7 minutes. Reserve juices. Add chicken to skillet with bacon juice (I used a 10 inch pan) and cook over med-high heat for 3-5 minutes, turning once until golden brown. Set aside.
-Dice onion, reduce heat to med and add onion, flour, butter and garlic to skillet. Stir 1-2 minutes until garlic is fragrant and flour in incorporated. Add chicken, reserved juices, bacon, mushrooms, broth, wine, worstershire sauce and thyme. Cover, cook 12-14 minutes until chicken is cooked.

I made red potatoes, diced, baked in the oven at 450 with olive oil, salt, pepper and thyme. 25-27 minutes.
