Saturday - Salsa burgers, roasted broccoli, homemade mac and cheese.

Sunday - I HOPE it will be leftover salsa burgers and chips with a salad!

I have GOT to get my spring menus in place here!!! I'm still lagging behind in setting spring menus in place! I think I will commit one day this week to sitting down and looking for some inspiration to add to my menus. I have several Barefoot Contessa episodes recorded...and a few recipes I have in my file that I want to try...I just need to pull things together!!! Can you tell I'm trying to motivate myself? I've just been so busy with baseball and some big re-org projects around here I haven't given time to my menus...and my family is about ready to revolt. I always read what Stef is making and feel inspired! Thank you Stef for always being SO inspiring to me in the kitchen!!!!!!

My brother is visiting from San Diego and he is a GREAT COOK! So, he's making some Chinese Food this evening. And, tomorrow I think Chicken Parmesan in the Crockpot.

We are having very simple meals, thanks to dd's dance competition tomorrow. We'll probably have teriyaki chicken with rice one day and pasta with marinara sauce the other day.

Tomorrow I'll make a simpler version of this Rachel Ray recipe: Florentine Mac and cheese and roast chicken sausage meatballs (here)
