Well, it should be homemade pizza, but ds has a track meet tonight and grandma and grandpa are coming for the weekend for my other ds's 1st Communion, so, I think were just going to order it! Who has time to cook?!

stir fry shrimp (from Costco) with bell peppers, onions, celery.....over either rice or pasta, haven’t decided. I’ll mix in some seasonings, like garlic....pepper....
Has anyone used “Bays Seasonings”? I keep seeing it at Costco’s, wasn’t sure what it would bring to the table....

Italian spinach pie and fruit salad.
ITALIAN SPINACH PIE (recipe doesn't call for a pie crust, but I think it tastes so much better in one, so that's how I make it.)
1 container (16 oz) Low Fat Cottage Cheese
1 pkg (10 oz) frozen chopped spinach, thawed, well drained
1 cup shredded mozzarella cheese
4 eggs, beaten
1 jar (7 oz) roasted red peppers, well drained, chopped
1/3 cup grated Parmesan cheese
1 tsp. dried oregano leaves
Preheat oven to 350. Mix all ingredients until well blended. Pour into greased 9-inch pie plate. Bake 45 minutes or until center is set. (Note--I take it out and let it "set," or else it's too wet for us).

I was thinking about pierogis...and those may still be on the menu, but, then homemade pizzas do sound good...
hmmmm....oh, but our area's most renowned fish and chips place is having a great special, and dh will be driving right by.....decisions, decisions...

We're going out for fish n' chips! I've been baking all day (brownies, spinich puffs, bread) and now am too pooped to think about supper, never mind go back in the kitchen to cook it!!

Pasta salad - pasta, asparagus, yellow and orange sweet peppers, red onion, bright red grape tomatoes in an oil and vinegar dressing; pineapple; probably ice cream with hot fudge sauce - still working on that Safeway ice cream special. The best part - I've made it ahead of time, so now I can just relax until dinner!

Carnitas, corn & flour tortillas, cilantro rice, guacamole, salsa(storebought), blackbeans, 5fruit sorbet, allergy safe brownies. We're having friends over so I've been cooking and cleaning all day. Just now taking a breather, they'll be here soon! :)

Georgian beans (kidney beans boiled with fried onions and garlic and lots of pepper), roasted root veggies and rhubarb (gotta get rid of last years rhubarb!) and apple crisp...(we don't eat meat, eggs, fish etc. on Fridays)

Friday is easy fare here. Generally it is fish n' chip night or what we call 'scratch it' aka leftovers and canned baked beans, scrambled eggs etc.
As we move into autumn I'm trying to be a little more inspiring and we are having soups on Friday nights for this month. consecutively, pumpkin, Potato, Vegetable and Barley & Pumpkin again.
