Our day is completely chaotic. Dd has a meeting this afternoon (letterboxing, if the weather holds) and a dance gig tonight. I have a feeling my menfolk will be eating leftovers and I'll be stuck with a drive-thru dinner.

(I'm sorry that I have no idea who wrote out these recipes but I cut and pasted them into a word document from the search and printed them out for my Homemakers notebook)

We're having baked salmon, risotto from a box, and cooked carrots. Looking for soft/mush-able. Dd had her braces tightened today and can't challenge her chewing.

I'm sort of making the recipe up as I go along! I'll let you know how it tastes.

I can say it sure smells good right now, however. Then again, what's not to love about mushrooms, onions and garlic sauteed in butter!

Just wanted to say that the Wild Rice and Duck casserole turned out really well.

In no specific amounts, I used the stock that I had made from duck bones to cook the rice. I used wild rice and brown rice in the ratio of 3 parts brown to one part wild.

While that was cooking, I sauteed mushrooms (button, sh*take, and portabella), onions, garlic, raisins (brown and golden, finely minced) and currants, and pecans separately in butter. Once the rice was finished cooking, I added the duck and finely chopped gizzards to the rice and then finally added all of the pre-sauteed items.

If you can follow that, you are a better woman than I am!

Cheers, and I hope your Thursday dinner is delicious. Mine will probably from that lovely Scottish restaurant...McDonalds...
