How do you make your chicken enchiladas, Suzanne? I have some leftover chicken I could use?!?!?

Otherwise, we are having salmon with veggies, side salad, maybe saffron rice.

Looks like it will be crockpot apricot chicken, rice and asparagus. I can make everything but the veggies ahead of time.

Isn't it funny how kids will eagerly eat most things if the name is appealing?! Heaven forbid you tell them "beans and cabbage for dinner"!

I'm thinking I need to clean out the fridges and see what leftovers there are before I plan dinner.

Either way dinner needs to be soemthing simple that I remember to cook early. Maybe tacos.

Pasta casserole that's a fridge clean-out, made of leftover ratatouille, pasta, leftover cheese sauce, and mozzarella. We'll see how it is.

We had a huge Chef salad with all the fixings!!

Wonderful for the first really hot day, it hit 88 degrees!
