Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

We have always used this recipe:
1 cup sugar
1 cup brown sugar
1 cup corn syrup
1 cup water
Bring to a boil and boil for 5 minutes.
Add 1 teaspoon of vanilla.

Granted--it is not healthy, but it's all we use. Besure to stay with it as it boils. It can make an awful mess when it boils over (just sayin' )

You can use berries of any kind, mix with a little water (or juice), add sugar, honey or sweetener, heat just to boiling, then simmer to desired thickness.... incredible, easy-to-make syrup....so much better than storebought bottled fruit syrups!

If you have homemade or storebought jam or jelly you can also simply heat in a saucepan, thin with a little water of juice to desired consistency, then heat further to desired thickness and temperature for yet another lovely syrup.

My mother always made "poor man's syrup"...add a little water to brown sugar, heat just to boiling...makes a another delicious homemade syrup...we always preferred it over storebought bottled syrup. A touch of vanilla or any other extract can really enhance the flavor. It's fun to experiment. If you don't have brown sugar, you might try regular sugar and add a touch of molasses or sorghum....my children would prefer molasses, sorghum is definitely an acquired taste.

This is making me really hungry, however I have to steer clear of all of these syrups and use pure maple syrup instead, due to blood sugar issues.

I made an apple cinnamon syrup with apple juice from our apples picked in the fall. It's from the Ball preserving book. I'll copy it out if you are interested.

We made a "kind of" syrup once after we found we were out of syrup only AFTER we'd made pancakes

I'm not sure of proportions but I heated honey, butter and cinnamon until it looked to be the right consistency... it was yummy.

Beth and Kathleen, I would be interested in your recipes if you get a minute to post them!
I never knew syrup making could be so easy.
