I am here at my desk planning the menu for next week and I realized that I am in a rut when it comes to side dishes. What are you favorite side dishes?

Oh, my, it sure is easy to get in a rut with side dishes, isn't it? I don't feel very creative recently either. A couple we do that are beyond the basic potato or rice side are:
Twice baked potatoes
Angel hair pasta w/butter and pesto
I also remembered that there had been a couple other threads with some ideas - it was funny to reread mine - still in a rut...
I need help with side dishes
Top 5 side dishes
Maybe we should have a "Try a New Side Dish" Day and everyone finds something new and different to try and share here...

What a list, Stef! You are certainly not in a rut.
I'll have to come back to this list and ask for some recipes. Some of the things you list i am not familiar with. But for now, could you share your recipe for tortilla española? I never thought of using it as a side dish... what do you pair it with?

My kitchen has been torn apart for 4 months now, and I just cant muster any enthusiasm for cooking
Side dishes are pasta, potato, or rice and frozen bag a veggies. I hang my head in shame

At least you have an excuse. Those are my normal sides. I did branch out and buy frozen yams today! WooHoo
I need help out of this rut. I'll be watching this thread and hopefully get some great ideas and recipes.

Stef wins!!!! Seriously, I am so glad you listed all of that.....what a great resource! Are you all dairy free, because I noticed many of these could definitely be made dairy free....bonus!! Eating like that, we would all live to be 100!!

I would humbly add my little side dish of brussel sprouts....must be made with FRESH brussel sprouts....roasted in olive oil and maple syrup.....just a few teaspoons of syrup.....this is divine, give brussel sprouts a chance I tell ya!!!

My sides are the worst! Rice (varied by either white, wild, yellow or rice and beans) or potatoes (white, mashed or baked) or pasta.
Wow, boring! And our veggies, corn, green beans or peas. Maybe the occasional salad.
Okay so maybe I need to look at Stef's list a bit closer.

I really don't have a recipe, Natalia. The one that goes over here well the most is not a side dish but a main dish -- potatoes, green and red peppers, bacon, ham, onions -- because it's so good.
My other tortilla espanola is very plain -- just potatoes and onions.
Chop up russets to 1-inch pieces, fry in a bit of oil with chopped onion in cast iron skillet. When the russets are fork-tender, pour in beaten eggs and cook on low, covered, until mostly set. Cut into squares.
Goes well with things like roast chicken, or grilled sausages, or sausages cooked in a (sometimes winey) tomato sauce.
I don't make TE often because of egg allergies in the family, but I love its simplicity. It's also great for pot lucks and picnics because it's good finger-food and can be served at any temperature.

Actually, yes!! Because cow tongue is usually prepared in a rich tomatoey base (at least here in our house), the daikon/carrot pickles would be a suitable palate-cleanser.

Yes, we're mostly dairy-free because of allergies, but oh, how I miss my baked potato with butter and sour cream, and mac-and-4-cheeses...

You and me, both, Sister!!! I love sour cream.....and butter....and mac and cheese, REAL mac and cheese, not those impostors in a box! My older son fixes the box stuff with the gooey cheese, because the powder stuff would seriously dangerous in my house, but this son doesn’t do well with a lot of other proteins, like some beans and chicken....so he does need dairy to make it up...that is about it for dairy in our house....
I have found now that I don’t eat milk products that often, I am becoming lactose intolerant....
I am so glad you like the brussel sprouts, we love them here.....we fix fresh asparagus the same way, sans syrup, and love it, too.

Lentil salad:
cold version:
boil water as if for pasta. add salt and cook lentils until just cooked through. drain. toss with dressing of choice (or olive oil and lemon), and whatever else you like -- minced carrot, onions, garlic, red peppers are good additions, plus salt and pepper to taste.
hot version:
roughly same ingredients, except sauteed together in some olive oil (i start out with the garlic and onion). and then some liquid and cooked 'til completely absorbed. some lovely additions: chopped spicy sausage (precooked) or chopped ham.
here's one of my favorite lentil salad recipes.
pasta arrabiata is just pasta tossed with a spicy tomato sauce: olive oil, lots of garlic, hot pepper flakes, chopped tomatoes (i use canned, and include the liquid it comes in), basil and/or oregano, salt and pepper. (depending on how much time i have, the sauce either cooks for a long time or no longer than 10 minutes)
pasta with spicy almond butter sauce and broccoli is an italian riff on an old chinese recipe that uses sesame paste and spicy bean paste.
cook pasta according to manufacturer directions. while pasta is cooking, heat almond butter, soy sauce, sesame oil, hot pepper flakes in a skillet, until "flowing" (add water if it's too thick). last 5 minutes of cooking, add broccoli (cut into florets) to pasta. drain pasta and broccoli and toss with sauce.
chickpea salad is like hummus except not pureed. soak dried chickpeas overnight (or use canned). boil until soft. peel chickpeas (tedious job) if you want. toss with olive oil, lemon juice, a bit of tahini, salt and pepper, some chopped italian parsley.

natalia, kimchee is a Korean pickle-type dish made of napa cabbage, etc. it's spicy and soooo good with grilled meats.
here's a traditional recipe. i like using the one from nourishing traditions, though, which uses whey for the liquid.

My kitchen's in perfect, fine working order and these are my standard fare!! I'm obviously not very creative in the kitchen!
Ohhh...something sooo easy I make is to steam carrots, set aside in another bowl and heat/melt 1 TBSP butter and then add equal amount of brown sugar and then add back in the carrots. So, it's just a brown sugar glaze. Sooo simple...came from my daughter's Strawberry Shortcake cookbook! That's all I can offer.
