Hey Jen - what does it taste like?
Also - do you use it instead of regular milk in baking? I have no recipes with it for baking - though I have a little bit of a penchant for condensed milk in my tea

Hmmm...well, we don't like it as a substitute for regular milk in things like cereal or with cookies, but it does have a rich, creamy consistency, so I use it in all my baking that calls for milk. We like the richer flavor it imparts. It's especially yummy in homemade pancakes, waffles and cakes. I buy it by the case - 2 at a time - from Costco.

We use it in coffee/tea here all the time, too!
I've used it in cooking when out of regular milk - just dilute with an equal amount of water to get whole milk.
And we buy it by the case as well!

I use it in meatloaf/meatball mix instead of milk, if I have it in the pantry and I'm out of milk. Works great.

Yes, you can use it undilute for adding creaminess.. but if you're looking for a true MILK substitute.. dilute with the same amount of water. It is sure handy to have in the cupboard if you run out of milk and need just that 1/4 cup for a recipe or something

I always keep a can or two in the pantry for using in recipes if I'm running low on regular milk. I really like to add it to my potato soup b/c it does make it creamier. Honestly I've never diluted it...shows my culinary knowledge! Now I know!
Is it healthy? hmmmm...never thought about it.

If you are dairy free, like us, and want to use evaporated milk in a pumpkin pie recipe, we had a recipe that used coconut milk,and it was fabulous!!! So, that is an alternative to add thickness and creaminess, and I think it might be a tiny bit healthier, but I don't have a can in front of me, so I am not sure about that
Using the coconut milk in the pie, I was expecting a "cocunutty" taste, and honestly, had I not known what was in it, I wouldn't have guessed it. Probably with all of the strong spices, it masked some of it.

My MIL raised her children on canned milk and karo syrup befor there were formulas for babies who couldn't BF. I personally cringe at the idea of karo in my babies , but all of her children lived through it .

I think there might have been a recipe in Dr. Spock's book with these ingredients. My sister used it for her children (it was far, far less expensive than traditional formulas). This was many years ago.

I would think evaporated milk would be as healthy as powdered milk?

I suppose I meant relatively speaking...it's not milk from pasture fed cows or anything. I suppose when I said it's not healthy, I was thinking nutrient dense. I also thought there were more sugars in there but, I see there's not too much.

What everyone who loves it here said. I used to love it in a cup of my grandfather's homegrown barako coffee. And it's also the secret to our family's leche flan recipe. (I say "secret" because not very many people have the same proportions as ours has.) We don't particularly think it's "healthy" for the same reasons Jen says, but used occasionally or in a pinch I think it's awesome.

My feeling is that it's not any worse for you than any other milk that's more or less standard, basically cow milk, pastuerized and homogenized..
So in that it's probably less healthy than say organic or especially having your own home grown grass fed cows that you milk etc.
So how healthy it is depends on how you feel about milk

OK Ladies - I have already used 2 cans. Yesterday I made my Saint Lucia bread using a evaporated milk instead of regular - my bread turned out wonderful! I tasted a bit of the milk and it was a nice taste. Today I made my super garlicky potato soup (to try and nip my boys' sore throats in the bud and again used a can of evaporated milk as I had no heavy cream - verdict is yummy.
The big test is whether I can put it in my tea - not done this yet. I cannot bear any artificial creamer in my tea - when I am out and buy tea I always put on my Queens English accent and ask for some milk with it please, just in case anyone thinks creamer will do I will try it in my tea soon - because I have had many a miserable morning when we have run out of milk and I cannot have my 5am cup of tea (I would never deign to have it without milk!)
