My family has recently begun to seek some alternative menues, for various reasons, and we are coming up short. We are looking for recipes that have no animal or animal products (relatively vegan), which includes fish with backbones; and no olive oil (but I don't use any other oils already!).

We can and do eat all of the above items, we're just looking to lessen dependence on it (for many reasons). Unfortunately I am having trouble finding anything that does not substitute soy for dairy or meat.

We're doing a lot of stir-fry without the soy sauce and I've eaten way more shrimp in the last month than I have my whole life. Lots of mixed vegetables and rice.

I would LOVE to hear others' suggestions.

are you doing gluten free too?

seitan, aka "wheat meat" is a surprising good substitute for meat. we just tried it the other day and even DH was pleasantly surprised.

lots of lentils. lentils are a good ground meat substitute.

i cannot eat shellfish/shrimp (gag) so i am not going to be much help there.

try other grains besides rice - barley, quinoa, etc. rice will get real boring real fast.

i can't eat much soy, or dairy, so i always eat like this.

(i'm dying to know why "no olive oil.")

well we really like a simple pot of cooked pinto beans.. now we mostly add cheese on top.. but not necessary.. add a few seasonings and it's yummy.

Try roasting the veggies for a change from stir fry.

I imagine you could do tons with soups just by changing which ingredients you have in a soup.. sometimes less is more.. like you could have a broccoli soup (try with rosemary in it) or a tomato soup (add mexican spices for a nice change from traditional) or a potato and leek soup.

Mushrooms like the portobello can add a meaty texture without any meat or soy.

oh beans (lots of types of beans would work) and pasta together make a nice combo.. and a change from rice.

I just found this lovely lovely cookbook - just for treats and sweets - called Babycakes- vegan and dairy free. It uses soy - we do not do soy at all and I use regular milk - but you could use Rice milk. Also we do butter rather than margarine or shortening - but coconut oil is a great alternative.

Sorry - does not help on main meals - but it is nice to find an allergy cookbook with treats that look and taste nice.

Thank you all for these ideas. We are trying hard to avoid soy/tofu as well - just seems to defeat the purpose.

We are not entirely going Eastern Rite/Orthodox, but we have spiritual tendencies that direction and the dietary changes for fasting days not only serve that purpose, but are also necessary for health reasons. The oils are on the fasting rules for many days in the fasting guidelines.

I think I'm writing my own cookbook....

Have you looked for cookbooks at the various Orthodox publishers' websites?

Oh YES.

It is difficult to discern online which are good sources, because of the high amount of time I have spent sitting on the floor of brick and mortar Orthodox bookstores reading through all of their cookbooks - just too much soy/tofu in enough recipes to just the cost of the book. I have enough cookbooks that I don't use as it is

So I have been known to send e-mails to the publishers/authors to find out how many of the recipes contain tofu/soy and the few responses I've received back indicate that we have to have tofu/soy in order to live today. That statement alone scares me. But that is for another thread. The underlying factor is that while we are fasting, I don't want to be purchasing items we wouldn't ordinarily purchase - we're *fasting* after all, we should be buying *less* and using the money for almsgiving.

We dont use soy either and can't have gluten and we grew up land locked and just cant stomach shellfish...so i understand needing your "own" cookbook

I second the above , lots of beans -think cold and hot-

so try garbanzos or kidney beans tossed with fresh spinach and balsamic vinegar

hot pintos served over white rice cooked in spicy tomato sauce or enchilada sauce.

hot blackbeans sprinkled with red onions that have been soaked in redwine vinegar. served over brown rice.

try brown, white , jasmine , basmati- black-lots of kinds of rice as well as other grains.

hummus made from garbanzos or white beans served with corn chips...

ministrone soups
corn fresh dill and potato chowder with rice milk creamer.

homemade potato or sweet potato fries

try enchiladas made with corn tortillas filled with refried beans and chopped red and orange bell peppers and onions. topped with avacados

fill pitas with brown rice and bell pepper slices and avacados, or sprouts or cucumbers...etc

use your stirfry to make "eggrolls" either with wonton wrappers baked or just lettuce rolled up or sheets of nori or spring roll wrappers.

baked potatoes with homemade veggie chili

vinegar slaws- cabbage, broccoli, carrot etc...

smoothies, smoothies smoothies :)

Grilled portabello mushrooms make great burgers.   Quorn is a great chicken substitute. Unlike most meatless "meats" it's not soy based - it's fungus based.       Once you get over that - think mushrooms - it's really good.   It's in the freezer section of some supermarkets. The chunks when made with egg noodles and cream of mushroom soup - or some other sauce - tastes a bit like tuna casserole.   The cutlets are awesome sauteed and are like chicken or turkey. You can make all the usual sides, like stuffing - Pepperidge Farm and others make seasoned cubes without any chicken products or flavorings, sweet potatoes, cranberry sauce, etc..   They also have Quorn nuggets which are good too.

I'll ditto the suggestion for lots of bean dishes.

I'm not much help at all but I just wanted to say that we use Rice Milk in place of dairy and soy. It works fine in all the recipes I've tried.

And I agree that grilled portabello mushrooms make great burgers!

good cookbook:

Supermarket Vegan

i really like this cookbook author's other stuff, and got this the moment it was released. i love it.

she makes real dishes showcasing veggies/grains, and not just trying to reproduce meat based dishes with substitutes. it shouldn't be hard to adjust for the oil.

(we do a much more Eastern Rite looking fast also. i was wondering if that was your reason behind the olive oil!)
