I recently got a silicon muffin pan (a cheap one)and I have a couple questions if any one can help me.
Do you put them directly on the oven rack or do you need to insert them into a muffin tin or set on a baking sheet?
Do I need to adjust my recipes (baking times/temps) at all for these pans?
Clean-up: any special care needed or can I hand or dishwasher them safely?

I don't have any silicon pans because for some reason the idea of cooking in that material worries me. Did you do any research (I have not ) about them? I worry about it leaching anything into the food. It is not something I have heard about anywhere, just my own odd idea. I guess it seems too close to plastic, maybe.

Anyone?

silicon is very unlikely to leach.. better than most metals in fact.. but I don't know about the dyes or anythign else they made in it.

I have two silicone muffin pans - but only use them occasionally for baking. When baking with the pans, I find that the muffins don’t brown as well as in the metal pans.

I've never changed my recipes (ingredients or procedures) and things seem to come out fine - with the exception of not browning as well.

According to the directions on mine, they are dishwasher safe. But I find that they rarely get clean completely in the dishwasher. Something is usually still stuck in the corners of the muffin cups. The directions also tell you to put them on a baking sheet for stability.

But on a positive note, the pans are great for freezing small qualities like extra egg whites, juice leftovers for smoothies, veggie purees to toss into pasta sauce. And I’ve heard people use them for making little frozen desserts – but I’ve not had a chance to try making little ice cream cakes, yet.

Put them on a baking sheet. I have lots of silicone bakeware and really like it. I hate the inevitable chiseling-off of stuck-on dough that I always got with metal pans. Silicone's pretty non-stick even without oil.

It does tend to hold grease, and I find it only gets really clean in the dishwasher or with lots and lots of soap and hot water.

Theresa, hello! I have a few different silicon things that I use and love. I bought them for the boat because you can shove them into a ziplock bag for storage! Regarding the cleaning, I just invert all the cups and stick it in the dishwasher now. Best way ever to clean all those muffin cups! (I nearly wrote muffin tins but that wouldn't be quite right now, would it? )
