My son is bringing home four friends for their four day break this week and I am thinking about food, and plenty of it! I know when my two older boys come home they eat so much, and then their friends start showing up. It always surprises me how much young men can eat.

Because his friends will be here from Wednesday evening until Sunday I would like to have a lot of food available and prepare whatever I can ahead. Do any of you feel like you just stand in the kitchen the whole time your older kids are home? I am always exhausted when they leave! Happy, but exhausted.

I would love to hear any suggestions.

Lunch meat and tons of it and varieties of it?
chicken or tuna sandwich stuff
potato salad
Lots of quick in the oven stuff - buffalo winds, chicken tenders, monzarella bites...
popcorn!
brownies/icecream (house fav here)
coffee! (altho it's terribly hard to imagine young men/boys needing MORE energy! )
rotel/cheese dip and chips
raw carrots
Fruits! apples, bananas (for peanutbutter sandwiches - the sandwich of the King !)

Oh, my, I just did this over fall break but it was for my dd and her friend. Still they eat a lot coming home and I did seem to spend an awful lot of time in the kitchen. One thing I did do, that I think they appreciated, was to make the food in large quantities and then freeze leftovers in single serving containers. They had frozen, ready to microwave meals, ready to take back with them for the freezer.

If there are things you can have mostly pre-made, it does help. I also ask my dc if there are any favorites they want while home. I have a lasagne that is really time intensive, but freezes great and then is ready to pull out and pop into the oven. I also do a crock pot roast so then I only have veggies to cook. I have a stir fry that is labor intensive but you can do all the chopping and marinating ahead of time and the cooking only takes about 10 minutes or so. Now that the weather is getting chillier, having lots of homemade soups is a great, one bowl microwave snack for big appetites. You can brown the hamburger ahead of time and freeze it and then just pull it out to make chili or vegetable soup. You can do the same thing with chicken - pre-make chicken noodle soup without the noodles and then cook the noodles fresh whenever you eat it. (My boys live at home and are all hitting those teen growth years - and they can put things away with what seems like never ending appetites). Another good make ahead - deviled eggs. They are quickee breakfast or great snacks. I also have a recipe for omelets that you make by putting the eggs and mix into individual zip lock bags. Now normally, I'd say that this is way too much waste of plastic (and expensive plastic to boot) - but if there's a crowd and for a special breakfast you can have everthing all pre cut up and they simply mix what they want in a bag with the eggs.

The hard part for me this last time was that her friend does not eat meat - and we are big meat eaters, so I didn't have a lot of quick meal ideas. I should have been smart like you and asked here. I ended up making some stuff mushrooms just for snacking. Dinner one night was a sort of lasagne (meatless with lots of spinach and cheese) which is one of our Friday meals. The other night I made Quiche and combined it with a meat based soup for my boys who would have choked on no meat and Quiche to boot.

If you want me to type up any of the recipes, just let me know.

Edited to add - just saw the above post which reminded me that you can cook turkey ahead of time and then you have turkey for salads and sandwhiches - it lasts a lot longer than store bought sandwhich meat and can be frozen if not used up. You can also use it to make Turkey and dumplings (My grandmother made her own dumplings from scratch. I do them from a box of bisquick)

When mine come home what they crave most is the food that makes them feel like they are home.Food they grew up with but can't really get at the cafe at school. It's comfort food, you know? If you have any family favorites that ds grew up with, I'm sure he will appreciate having them again after being away.

Seconding lasagna. I made some (but with meat!) for ds and his buddies the night before he left for college, and they ate an entire extra large pan.

Also second the brownies!
And good fruit! (Not the bruised and mushy stuff the cafeterias are known for!)

What are ds's favorites? Chances are, the other boys will like those, too.

Not sure where you are or your weather, but it's definitely cold enough here for chili, chicken noodle soup, stew...and bread and salad to go with it.

How about sloppy joes? My mum used to make a big pot when I had friends over in high school.

Mexican and Chinese are also favorites with my boys and their friends.

I have ds home for this weekend and Monday and Tuesday. He starts back on Weds. Then we'll be counting the days until Thanksgiving break!
