After last week's talk of fried plantains I am making arepas with black beans and cotija, some steamed veggie (probably cauliflower) and fried plantains as long as my plantains are ripe :)

The prenatal appointment I was supposed to have yesterday was rescheduled for this afternoon, so I did crockpot italian chicken over pasta (today's meal) yesterday and we're having leftovers (yesterday's meal) tonight--easy enough for Daddy to assemble while he's home with the kids.

Homemade pizza (with homemade crust). The dc like pepperoni, but dh and I like it with Italian sausage (which I have to make since they don't sell that locally), black olives, and gorgonzola cheese as well as vegetables. I will probably serve an antipasti, maybe a salad, and some nice wine.

I think I'm gonna chop up leftover porkchops, and make a casserole with some rice cooked with mushroom/zuccini/italian seasoning and add some corn into it and bake it to heat it all up and then top with cheese for fun.

Company tonight so I have a plan for once! Chicken with a curry-asian-honey-type glaze, spinach and leeks sauteed together, roasted squash if I can time it right and bread from the bakery around the corner. Then some frozen berry cobbler for dessert with ice cream, maybe.

I am bringing dinner to a friend who just had a new baby...and I am vacillating between spinach, bacon, and cheese casserole.
Or a chicken and mushroom dinner with wild rice.

I making a recipe I grew up with. It sounds odd, but it's really good and super simple to make.
Tuna Green Beans on Toast.
Toast several slices of whole grain bread and line the bottom of a 9x13 dish
Top with large can of tuna fish, drained
Top with can of cream of mushroom soup, diluted with just a bit of milk
Top that with a bag of frozen green beans
Then finally, top with shredded cheddar cheese. Cover with foil and bake 350 until heated through and remove foil for last few minutes to lightly brown the top.
