Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

We're having brown rice which I'm thinking of stir-frying with homemade kimchi, some leftover chicken soup, and maybe Shrimp in Red Sauce (basically a ketchupy sweet and soury thing).

We are having Beef, Cheese, and Noodle Bake which I made a few weeks ago. My teenagers loved it. I will probably serve it with corn or green peas, bread and a salad.

Slow Cooker Orange Chicken

1 1/2 lbs boneless, skinless chicken - cut in chunks
1/2 c flour
1 T kosher salt
6 oz (1/2 can) frozen orange juice concentrate (no pulp)
3 T brown sugar
1 t balsamic vinegar
3 T ketchup or catsup
olive oil for browning chicken

Dredge chicken in flour. Heat olive oil in skillet and brown chicken on all sides. Place chicken in slow cooker.

Combine other ingredients. Pour sauce over chicken and toss to coat.

Cover and cook on low for 5-6 hours.

I usually serve with rice.

Chicken enchiladas with left over chicken from the baked whole chickens from the other night.

It is so nice to know what's for dinner before noon!

I need to figure out something with no smell (or a really good smell) because we are having someone come to see the house (to sell) at 6:30!

I think the girls would love chocolate chip cookies for dinner, don't you? Only problem with that is the clean up that I don't have any extra time for!

Amy, bake some bread to have with cheese.. you can take the bread and cheese with you so that there's no mess at home.

I dont' know.. I need something that reheats well incase dh comes home but late.. there's like 4 possibilities tonight for him.. 2 are him not here, 1 is him here and 1 is him here but much later. Which takes out the easy kid friendly meals I had been considering.. so I don't know what I'm doing now

Chicken curry on rice. If I can get my act together, I'll brown up the chicken early this afternoon, since we get don't get home from ballet till 5:30. Then I'll just boil up some rice, and the curry sauce when we get home. My kids love this dinner.

Applesauce chicken courtesy of "A Year of Slow Cooking" blog, brown rice, peas. And finishing off the last four brownies in the pan for dessert (all of us, not just me ).
