It's just so darn hot around here, I'm thinking of ways to keep the temperature down in the kitchen. Anyone here use a pressure cooker? What are your favorite recipes for the pressure cooker, and do you have any cookbook recommendations? Also, do you think it's worth the extra cost to get a digital pressure cooker?

I don't use my pressure cooker as often as my crock pot. I'm not sure why, because it would save me time in the evenings if I hadn't set the crock to go.   Hmmm.... maybe I will have to start using it again this fall!

Anyway, here are a few recipes for you to try. Enjoy!

Caribbean Pork Jerk

2 c. beef broth
2 tsp. dried minced onion
1 tsp. dried thyme
1 tsp. garlic powder
1 tsp. crushed red pepper flakes
1/4 tsp. cinnamon
1/4 tsp. ground ginger
1/4 tsp. allspice
1/8 tsp. cloves
1 pound pork tenderloin
3 Tbsp. cold water
2 Tbsp. cornstartch

Set trivet or rack in cooker and pour in broth. In a small bowl, combine onions and seasonings. Rub spice mixture onto all sides of the pork. Place tenderloin on rack in cooker. Lock lid. Bring to full pressure. Lower heat, maintaining pressure, and cook for 35 minutes. Let pressure drop naturally for 15 minutes. Quick release any remaining pressure. Transfer pork to serving platter. Whisk cornstarch into cold water until smooth. Pour into broth in cooker. Cook, stirring, until sauce thickens. Serve sauce with sliced pork tenderloin.

Easy Chicken Cacciatore

3 Tbsp. Olive Oil
2 lbs. boneless, skinless chicken breast halves, cut into 2 inch cubes
1/4 c. chicken broth
1 c. dry white wine (or white grape juice or chicken broth)
1 pound mushrooms, sliced
1 large onion, minced
2 tsp. garlic powder
1 small bunch basil, chopped
1 6 ounce can tomato paste
1/2 tsp. thyme leaves

Heat oil in pressure cooker. Add chicken and brown for about 5 minutes. Add remaining ingredients. Lock lid and bring to full pressure. Adjust heat to maintain pressure and cook for 12 minutes.   Release pressure and serve over pasta.

Oven Tender Swiss Steak

2 lbs. beef round steaks, 1 inch thick
Vegetable Oil
1 c. water
Salt and pepper to taste
1 onion, chopped
1 c. celery, diced
1 green pepper, diced
1 c. tomato juice

Cute meat into serving size pieces. Season with salt and pepper. Heat oil in cooker. Add meat and brown evenly on all sides.   Add remaining ingredients. Lock lid and bring to full pressure. Lower heat, maintaing pressure and cook for 15 minutes. Let pressure drop naturally. Thicken sauce as desired. Serve over hot cooked rice, pasta or mashed potatoes.

I LOVE my pressure cooker. One friend calls it a "last-minute crockpot". Seriously, I have to plan way ahead to use the crockpot but the pressure cooker does the same thing in less time so you can start something at 4:00 & have dinner by 5:00. I use it as often as I can but especially for stews, beans & soups.

I have 3 pressure cookers, different sizes! I had one 6qt, then needed another larger one when I was working as a personal chef, and it came with a smaller one. In addition to meals, they are great for cooking beans and whole grains, multigrain hot cereals, etc.
