Excuse my pregnant brain, but I brought home a huge bag of potatoes from Sam's Club last week only to discover that I already had a huge, unopened bag of potatoes from my last trip. So...we're going to be eating a lot of potatoes for a while. Any favorite recipes to share?

Roasted Potatoes - our favorite! Basically you cut up the potatoes, and toss with Olive Oil and Liptons dry soup mix. Cook in 350 oven for 30 minutes or so. Delicious!

Twice-baked potatoes. ( I think you could freeze these after preparing, too).
Potato soup.
Fried potatoes and onions/hash browns, for breakfast or for breakfast-as-dinner.

I was going to post the same recipe as Paula!
We just loved some our friend made for us to which she also added about 3/4 cup of parmesan to the mix. Yum!
(She actually didn't have any onion soup mix - she used some bouillon powder; garlic powder; maybe some dry onion; salt; pepper. She does it differently every time and is convinced that people love it because of the cheese. )

Cabin Potatoes (adapted from Williams-Sonoma Complete Outdoor Living)
4 large baking potatoes, about 3 pounds total
1 small red onion
salt and pepper
4 T butter
Peel and grate potatoes and onion. Add seasonings and stir well. Melt 2T butter in 10-12 inch frying pan over medium-high heat. Add potatoes and spread into an even layer. Cover with foil and a plate slightly smaller than the pan itself. Cook undisturbed 12-15 minutes. Flip onto a plate. Melt other 2T butter in pan. Slide potato pie back into pan, replace foil and plate, and cook another 10 minutes or until outside is brown and crispy and inside is soft and creamy.

I use a similar recipe to Paula, but I just roast them with olive oil and kosher salt.
How about a baked potato bar?

on the roasted potatoes.. I don't use bullion or soup mix.. just whatever sounds good.. often salt and black pepper and rosemary and garlic.. yum.
My kids love mashed potatoes.. we use about 16 potatoes from the grocery store 10lb bags for one meal of mashed. And my kids will eat those often.
Also scalloped potatoes are yummy.. add cheese and make them au gratin.

Potato soup
Shepherds Pie
Vegetable beef soup (heavy on the veggies, esp potatoes) with a crusty loaf of bread
I made some homemade chile Colorado last week, and it was oh-so-good (just finished the last of it this afternoon for my lunch), with some rice--and used a ton of potatoes chopped up in the broth/sauce with the meat...
Let's see...what else? Well, we eat a lot of potato salad, and mashed potatoes, and DH likes spicy home fries with kielbasa and sauerkraut, and crusty rolls.
Trying to think about other things, but that is what came to mind initially.

We eatscalloped potatoes for dinner with veges or salad.
The kids also love Nigella Lawson's Speedy Smashed fries - they love helping to smash the potatoes with a meat mallet!
We also love this Cashew and Potato Curry for dinner.

Twice baked potatoes are a favorite with everyone here, too. I just bake the potatoes. Cut in half, scoop out flesh. With electric mixer, mix in cream cheese to taste, ( a little milk and butter sometimes) until fluffy. Spoon back into skin and top with grated cheese. Reheat in oven.

I make homemade fries by julienning the potatoes -- the smaller they are the faster they cook -- tossing them in a jelly roll pan with olive oil, butter, salt and pepper and then roasting for half an hour ish. Fries is always a pregnancy craving for me, so this is a healthy cheap way to get me some.

My dd pours Ranch dressing over potatoes that she quarters and bakes them that way, very good and easy.

I'm late to say thinaks for all the recipes. We are still eating our way through the last bag, . They are getting a little wrinkly but holding up ok. We have a good quickie Friday meal that has become a new favorite, quarter up the potatoes, put them in a shallow baking pan, bake at 425 until fork-tender, and then pour over a couple cans of meatless chili, top with cheddar cheese, and cook until bubbly and cheese is melted.
