I was just coming here to post that tonight I am making something with ground beef. The kiddos saw the ground beef and asked for Danish meatballs. Glad that is taken care of. I'm so glad that thought of it, because I bought the meat in bulk and did not seperate it out extra meatballs I can freeze!
I WILL make a salad and some other veggie as a side.
We started "school" today so maybe I'll make something yummy for dessert.

We are having meatloaf, mashed potatoes and lima beans.
You will laugh at this, but lima beans are a favorite in our family, and you cannot buy them over here (must be a southern vegetable). But I found them at the American grocer (thank you for the Internet) and am making them as a surprise for my dh (who is a Yankee, but loves them anyway).

My brother says he and his wife (both vegan) use mashed lima beans in - get this - lasagne, instead of the cheese, and no one ever guesses the mystery ingredient!!

Rotisserie Chicken from the store (went grocery shopping this morning) with black beans and rice.
We are eating the whole chicken now with #4 eating so no more leftover chicken salad
Guess I'm going to have to buy two next time

Hubby made stuffed peppers last night with peppers from the garden, so I'm going to stick them in the crockpot to heat up. Yeah, easy!

Carole, if I ever come to Wales, make sure you don't serve lima beans. Southern or not, I never liked them.

Lima beans are a love them or hate them veggie. I was talking to another friend and she was glad I was surprising my dh, but also does not prefer limas.
Interesting that your brother substitutes it for cheese, Nancy. Have you tried this lasagne? I wonder how it tastes.
And dh was surprised. I had placed the bowl of beans on the table, and as he was serving his plate in the kitchen he said, "All we need are some lima beans." When he walked into the dining room, he could not believe it!
