I have a big bunch of jalapenos out of the garden- about 25- and that's AFTER giving many away to my sisters. This is my first year with my own garden and I really didn't expect this many off of one plant! Any ideas on what I can do with them? Does salsa freeze well?

Oh....you can put them in grilled cheese sandwiches, cornbread muffins....cheeseburgers....

Not sure about frozen salsa...why don't you make a frozen salsa ice cube and see how it unfreezes?

chop them up and freeze them and you can add them to things whenever you want.

The jalapeno grilled cheese sounds really good! I've got a bit of salsa left we made a few days ago-I'll try freezing it and seeing how it goes.

oooh. they would also be lovely roasted -- smoky, hot, and the heat will bring out the sweetness (caution: the heat will spread trhroughout the pepper you may want t deseed and devein and drain when done depending (say that 10x)on how hot they are to begin with and how hot you want your salsa. jalapenos vary in heat from pepper to pepper sometimes.

I simmer them in water until barely fork tender, then lay them on a cookie sheet to freeze. Then I store them in a freezer bag until I want them for salsa or other recipes.

I pickled them one year and they were delicious (according to my BIL--we couldn't eat them!). If you like hot, they are great that way!
