True confession time....
Last night I made pulled pork instead of gyros or enchiladas. So tonight, I am making gyros. I do need to run to the store for a few ingredients.
I also made a yummy ice cream dessert yesterday....Oreo Ice Cream Cake
First you make an oreo cookie crust.....smash oreos, either in a food processor or put the cookies in a big ziploc bag, grab your rolling pin and go to town hitting the oreos..
Then melt butter and mix with the oreos, press into a good sized 9x13 or so pan. Freeze.
After a bit, pull out pan with crust add ice cream, we usually use mint chocolate chip, just pile it on top of the crust. Freeze.
Again after a bit pull out the pan and add a layer of hot fudge. Freeze.
Finally, after is has frozen some add cool whip or whip your own and freeze. Serve.
Accept the hugs and kisses from your children. Promise them you will make it again soon.

Even with our food allergies, Costco has been a lifesaver, love that place!!!! They have some outstanding meatballs that I think are chicken teriyaki? Very good!!
For tonight, I am roasting fresh beets with olive oil, steaming fresh green beans and then pan searing with olive oil and garlic, quinoa with some onions and yellow and red peppers...and maybe some blueberry muffins. Going vegan tonight.

We're doing grilled chicken, red potatoes with rosemary and broccoli....I'd like to do mizithra cheese on that broccoli, but that's a luxury right now....don't mean to digress - I just love broccoli with mizithra cheese!

This is too funny. I just had my 16 yr old ds go to the grocery store and buy some Oreos for dessert . Kayleigh mentioned being hungry for some and I hadn't bought any in ages. Not to mention we'll be waiting for the voting outcome on the work contract tonight. It'll be a sweet indulgence. Now I wish I'd seen this recipe before sending him to the store.
I'm also cooking chicken monterey.

Mmmmm, Mary Chris, that sounds delicious. Do you remember that Oreo "Dirt" concoction that went around the 80s? Dirt.
I'm having London Broil and baked potatoes. I have VIRTUS training later tonight, so I have to get everything ready early.

Comfort food, after a day of picking blueberries in a delightfully cool Summer rain, running errands, then rinsing, sorting and freezing blueberries...Baked French Toast, made with local pure maple syrup and real vanilla. Crustless Quiche, made with onion fresh from the garden, diced red peppers, dill and garlic pepper. The smell of the French Toast and Quiche baking at the same time is incredible! Diced Cantaloupe from the farmers market for dessert...although the Oreo Ice Cream Cake sure sounds tempting!

So we didn't do this....I made homemade salsa and topped it on eggs with onions and potatoes....served with toast and apples.....
