This is our last week of swim team, the kids switched to another pool in the 'hood, so I have to drive them over there. I was so spoiled earlier this summer they all rode their bikes to practice. Anyhoo, all this to say, that is my excuse for not getting the meal threads going.
We have been cooking though. I made a yummy roasted plum tomato sauce and tossed in some grilled Italian sausage last night. Tacos earlier this week and I also made a balsalmic chicken and a baked fettucine (both from Catholic Cuisine), pasta carbonara.....can you tell we are carbo loading around here??
So what has been cooking at your house? Any new recipes??
Tonight I think we are doing chicken of some sort, corn on the cob, hopefully a salad and maybe some sort of peach dessert. I love evenings when I have time to cook.

Swim team taking up tons of time here too..
We had grilled cheese with canned peaches last night. My son offered to cook if we could have the grilled cheese.. and since we did have enough of everything I couldn't see any reason to turn him down

Nothing is cooking!
But...so you don't feel too sorry for us...I've splurged on some really nice cheeses and crackers along with bagged salads. Sandwiches and cereal will be a mainstay for awhile. It's monsoon here so it is extra hot and humid - yuck!
The Wesleydale with apricot and the Chevre with fig have been a big hit here . (I picked them up at Costco.)

This is my favorite new recipe for the summer:
Mexican Orzo Salad (from Fit Pregnancy mag)
1 1/2 cups Orzo (rice shaped pasta)
2 cups cooked shredded Chicken
1 15oz can Black Beans, drained, rinsed
1 15oz can Petite Diced Tomatoes, drained
1 cup shredded Cheddar Cheese
1 4oz can diced Mild Green Chilies
3 tblsp chopped fresh Cilantro
2 tblsp fresh Lime Juice
1 tsp ground Cumin
Salt & Pepper to taste
Dash Cayenne Pepper
Cook orzo according to package. Drain. Add everything else (it'll heat up from the orzo).
Serve warm or cold.

What wishful thinking this morning!!!! In reality tonight we are having I'm tired.... clean out the fridge!!!! Luckily there are lots of taco meat leftover from Tuesday!

We had roast chicken the other night and now I'm making stirfried chicken with veggies , herbs and diced tomatoes & parm cheese on a pasta .
Then tomorrow night we will have hot & sour soup from the left over chicken and stock .
I'm thinking of making some of those yummy soft pitas with souvlaki and viggies . I'm in a greek mood

I haven't been too adventurous. I added zucchini into my spaghetti sauce one night and it was great.
Taco night I made Sweet Corn Cake which was a nice addition.
And I've been using a yummy bbq sauce from TJ's for some chicken parts in the oven.
But otherwise it's the same old, really simple and fast recipes here.

I've been trying to use more fresh produce. Today my husband brought home 6 more cucumbers (we still have 5 from last week) from his colleague's garden. I have been using swim lesson time to go through cookbooks (see cucumber quantity above!) - I am not finding too many cuke recipes, but we've had some yummy food this week nonetheless.
Last night - gumbo (yummy chicken andouille sausage from Costco!)
Tonight - veggie lentil chili
Two nights ago - pasta with turkey meatballs in tomato sauce
Last week was Tomato Week - I had fun trying new recipes!

cucumbers are yummy to eat as sticks like you would carrot sticks or such
I love them tossed with vinegar and pepper and a bit of sugar.. I can sit and eat a whole cucumber by myself that way.
Lots of salad type of things
serviche (spelling may not be great) but it's chopped up crunchy veggies including cukes with shrimp meat and is like a type of taco filling or such.

Sounds like you wouldn't mind eating at our table. I made a cucumber salad tonight using five cucs. I can't stomach much right now, but that was perfect. While we were eating dinner (DH and kids had steak & baked potato) I asked DH what he would be willing to eat on HOT evenings that I really don't feel like heating up the kitchen. (He is a steak & potato man -- dinner isn't dinner unless there is a huge piece of meat on his plate) -- well, he said he wouldn't mind ceviche! We don't use shrimp or cucs, but ocean perch, tomatoes, oinions, of course cilantro, but it's a favorite here.

Nothing! I am tired of cooking, eating and serving food. If I could serve everyone tang and instant breakfast drink three times a day, I would.
Okay, just so you don't think that is what is actually happening, we had sausages, potatoes and peas tonight.
Pretty much I just grill some meat every day and add fruit or veg and sometimes a serving of brown rice. Lately I've been making that for lunch and then having snacks for dinner (cheese/yogurt, fruit, raw veggies, some kind of bread, and a square of chocolate). I put it all out on platters and let them each choose what they like. I guess because it's been hot lately (not today though!) I prefer to cook early and just set out cold stuff later in the day. When my hubby gets home, I just serve him the main meal left over from lunch.
