I just came into A LOT of squash. Any ideas on what to do with it all - I would hate for it to go to waste ... but there is only so much steamed squash a person can eat.

Is it summer squash? I have a WONDERFUL summer squash cassarole recipe....I'll post it for you tomorrow!

If it's yellow and/or green squash, here's what I do. I saute some onion and garlic in olive oil. Then I saute the cubed squash for a few minutes, till they're soft. Then i put it in a dish, top with parmesan and mozzarella. It's very tasty!

I apologize ... I should have clarified what type of "squash" .... it is summer squash.

grill it! If they are smallish, jsut cut in half longwise. If big, cut into thinnish slices longwise. Brush with olive oil and slap unto the grill as soon as you pull your meat off. Let it get brown grill lines. Sprinkle with salt and pepper, or lemon and olive oil, or diced tomatoes , basil and parmesan.

I really did mean to come back here on Saturday and post my recipe for summer squash casserole but life intervened!! So here it is hopefully not too late!
2 lbs of squash
2 eggs (beaten)
1/2 Cup chopped onion
1/2 Cup bread crumbs
Salt & pepper
1 TBS Sugar
1 stick butter
Grease casserole dish
Heat oven to 375 degrees
Cook squash--drain & cut up
Add to squash in cassarole dish: eggs, onions, half the bread crumbs, salt & pepper, half stick melted butter and mix.
Top with bread crumbs and remaining butter (melted)
Cook 40-45 minutes.
It's really easy if not a little time consuming and!

To grill you can also use a vegetable grilling basket. I slice thickly, toss with olive oil, garlic, salt and pepper, then grill in the basket. Even my dh likes it, and he doesn't eat it any other way.
