Hmmm.... How about lots of onions, and some "cream of something" soup? Add milk, green peas (or other veggie if you don't like that) and bake...

Or shredded red cabbage, apples and onions, then some chicken stock?

How about Flour the cutlets and begin to brown in the skillet, make Uncle Bens long grain rice with chicken broth. Stir in about a 1/2 cup of Mayo to the rice. Add the rice to the skillet and add apricot or apple jelly on top of the cutlets, simmer and watch for enough liquid in the skillet.
