My dh is going to be on his own for about three weeks while the kids and I go to the Dominican Republic to visit my family. I hate to leave him to his own device when it comes to meals. I have been freezing some portions of what I cook but I want to leave some other stuff that will be easy for him to heat up or make when he comes from work.
Any ideas of easy meals?

Stock your fridge with sandwich fixings (meat, sliced cheese) and rolls/bread before you go. If he likes fruit or yogurt, they make great portable snacks.

Or maybe he'll be like my dh and live on breakfast cereal and canned beans (not together)...

refried beans/tortillas/cheese makes an easy burrito, if you have a microwave he can even make 'em and heat 'em in there without cooking sperately

My dh does really well when I leave him a menu of meals for each day. When I write it all out for him he doesn't get "lost" and just head for McD's ( ) or the cereal. I buy the staples needed for the meal and give him the list of what to buy and when and he does great.

Having the list and instructions is a great idea. I don't know how I didn't think about it. I think he will be OK for the first week. I have store in the freezer single portions of the meals I have cooked recently. The second week he goes to the DR to bring the oldest two kids and stays there a week. Then he comes back for two weeks of being by himself. I could even email him a menu and instructions if I don't get to do it before I leave. Thanks!

Nique, you are funny! He will disown me if I suggest something like that. He despises McD!

I'll bet he will go to Subway sometimes. That, he can handle! Last time we did this, he ended up not eating half of what I left because friends kept feeling sorry for him and kept having him over. I hope this happens again but I can't just go and count on charity.:-)

Nancy, I am planning on buying lunch meat for his lunch. He is used to having leftovers but I think sandwiches for lunch will have to do for a while.

Jodie, I have not thought of burritos. That is a great idea. He loves beans.
