I have no idea what I'm making for dinner tonight. I'll have to dig through the freezer and see what we have. Maybe chicken??? Hopefully I'll get some inspiration from you ladies today.
I do plan on spending some time in the kitchen today making some muffins. I need some easy breakfasts on hand, next week we start morning swim practices and swim meets.

Well I was going to serve the exciting dish of leftovers. But my oldest ds is sick with the flu, so I think that I will be making chicken noodle soup!

Fried rice with leftover turkey mixed in...and a side...probably a bagged salad.
Dd and I are starting a new summer food plan. We're cooking (which we love) a big meal on Sunday and taking something from that meal to make a second meal on Thursday night. We had slow cooker turkey on Sunday with all the fixin's...yum.

A Thursday night favorite here:
Garlic Lime Chicken from the Saving Dinner cookbook
Potatoes - mashed
Spinach - w/ garlic and lemon
Carrots - peeled and set out while dinner cooks
Rare weekday Dessert:
Vanilla Cake mix from Trader Joes. I don't normally use mixes. Our son placed this in the cart once without me knowing. (First and only time he has done that - I was too surprised to be cross with him). Turns out it was delicious - it does not taste anything like "mix." Now, I buy one whenever I go to Trader Joes - which is an hour away. It is a rather small box, so there will not be leftovers. The one in our cabinet has been beckoning me to make it. Tonight's the night.
Carole - I pray that your son recovers quickly and the rest of your family is spared.

We were supposed to have baked chicken parm last night and beef fried rice tonight, but they got flip flopped. So tonight it's baked chicken parm and salads.

I am making meatloaf and probably salad. I borrowed the book Deceptively Delicious from my dd's therapist so I am going to try to stick some veggie purees in it this time and see if anyone notices

I was here looking for inspiration too.. I may have to go and hunt through the freezer.. hmm wonder if I have any meatloaf made up or if we ate it.. that sounds good

after investigating the freezer.. I don't have meatloaf.. but I have a bag of meatballs.. so now I'm thinking.. some sort of swiss steak type of sauce with meatballs over rice..

Jodie, I made Swedish meatballs a week or so ago with premade meatballs. I just added the spices to the sauce after I browned the meatballs, and the family loved it! And I have some very.picky.eaters!
The chicken noodle soup went over well. It always makes me feel like the complete mom when I make soup when someone is ill. It always makes me feel better when I am not feeling well.
Thank you ladies for all your prayers. I hope we all stay healthy. It is still school time here.
