I'd serve something your family enjoys, that way Father doesn't hear:"what's that?!!" "Yuck!" can I have something else, etc.
Probably go with a pasta or chicken dish.

Mary said my first thought. something that your family enjoys. I served enchiladas when we had a priest visiting and over for dinner. with refried beans and green salad. Simple and not a lot needing done at the last minute.. so I was relaxed and not rushing around.

I think a combination of Mary's and Jodie's suggestion. Something that your family likes but that can be mostly made ahead. I find that it puts guests at ease when they don't see you rushing around and working like a dog.

That is funny, Bridget!

I ended up making steak fajitas and beef burritos. I had all the toppings on the island and everyone served themselves, which worked out very well. It was very relaxing. We had ice cream with all sorts of toppings, but I forgot the whipped cream, thank goodness. The kids would probably have done the same thing.
