Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Does anyone have any brilliant ideas for light but filling summer breakfasts?

We usually eat a LOT of oatmeal & toast around here... broken up here and there by the occasional bowl of cold cereal or eggs/toast and maybe weekend pancakes or somesuch.

But oatmeal seems so... I don't know... HEARTY and I'd like a good list of alternatives.

I have fresh fruit when I can and occasionally serve it with yogurt... but that's all I can think of.

Ellie,

We like breakfast parfaits - which is a layering of your granola, fruit, yogurt over and over - my kids love it with granola, vanilla yogurt and bananas.

Hope that helps!

I always feel like I do the SAME things over and over again...I'll be interested to see the other responses you get!

Our usual oatmeal alternative is oat bran with butter, salt and pepper. Mmmmmmm. Good!

I have to second the fruit and yogurt. That's what I had this morning, organic vanilla yogurt with cantaloupe and watermelon and since I didn't have any granola, I just topped that off with my favorite healthy cereal.
What about smoothies? Boiled eggs and toast? My mom always boiled eggs ahead of time, peeled them, and kept them in ziploc bags, available whenever someone needed a quick snack full of protein. I loved that.
I like to buy bagels when they are on a major sale and freeze them. They thaw quickly. My family loves those with jam or just plain butter.
Muffins baked ahead of time with fresh fruit are nice. My favorite are banana oatmeal muffins with blueberries (berries are also purchased on sale and then frozen).
I can't break my 3 year old from oatmeal though! She loves it no matter the season!

oatmeal bars (I've been posting those a lot lately ).. they're one of my really nice things.. for one thing I can mix these up the night before and bake them in under an hour (baking time is about 20-30 min) so that I can bake them while the house is starting to cool down and have the rest of the night for it to keep cooling down.. and then you can munch on one with some fruit or juice with it.. yummy.
