Happy Memorial Day!! We are all being lazy around here this afternoon. This morning we finally planted the garden and finished up our backyard projects.

Tonight we plan to enjoy some bratwurst, baked beans, tortelleni salad and fruit. Maybe a yummy dessert too.

Thunderstorm through the area on Saturday, DH got called into work for lightning fires.. we also got rain so they're small and not getting big with any speed but they have to be checked out etc. So no clue when he might get off work either.

Something that would be good cold or re-warmed would be the best bet for dinner.. now to figure out what that is... hmmmmm

Might have to go and browse in the freezer and see what we might cook.

Turkey meatballs on pasta, artichokes...dh is not here tonight so we didn't plan to grill - and it's raining, anyway!

I've been writing most of the day (it was a dance weekend so I am behind on work) and it will be nice to enjoy an easy-to-cook meal.

We're in Colorado, so we have a ton of college guys coming over to watch the Nuggets play tonight. Grilling beer brats, macaroni salad, potato salad, baked beans, cantaloupe, and watermelon. Should be fun (even though it's pouring, my DH will grill in any weather! ).

We made little slider burgers mixed with onion soup mix and served with carmelized onions along with Tomato/mozzarella tortelloni tossed in olive oil and lots of garlic.

My hubby made and grilled shish k bobs over couscous, using Alton Brown's recipe...yummy. We even tried the grilled sweet potato and rutabaga. We love, love, love Alton Brown!
