Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Well, I got the right forum this time. This old dog can learn new tricks....

Today is May 1, optional memorial of St. Joseph the Worker, also the beginning of the month dedicated to Mary.

And I'm treating our family to...NOTHING...that is, nothing I'm going to make. Our parish's festival starts this evening and we're eating there.

You're doing great, Jenn.

Not sure yet. We have a computer guru friend coming over toniight to fix our multiple computer quirks.

For his friends he works by meal donations. I need to fix him something yummy!

Salmon patties, pasta and fresh fruit. I am planning on using my basic recipe for salmon patties but if anyone has a super fantastic one they would like to send my way, I'd appreciate it!

Melissa,
Those look yummy and I have all the ingredients except the capers but I know my kids will choose ketchup anyway! Thanks!

I am married to a Joseph! So we are celebrating with Baked Ziti, fresh homemade bread, and a beautiful tossed salad.

Maybe we'll have Sloppy Joes (as recommended by Jody in this thread - or as Suzanne called them - "Untidy Josephs" ).

I don't usually have capers on hand. I usually make half the amount of mayo (adding everything but the capers) and it's still really yummy on it! Please let me know how y'all like it!

Lasagna. I had a ton of left over spaghetti sauce so I made Lasagana or "Buzzonya" as my 6yo calls it!

Ended up fixing shrimp fetticini and cooking for way more than just the computer guy.

Melissa,
Those salmon cakes were a big hit! Next time, I'm going to have to double the recipe because the kids really liked them.
