Today is the Memorial of St. Catherine of Siena.
I'm not as creative or varied as Mary Chris. If I start a thread you're not going to be inspired. But I'm just going to get the ball rolling....
I have a whole chicken that I'm probably baking or roasting. Brown rice, spinach salad, some frozen veggies, and biscuits. Since it won't be as warm today, I'm not going to feel guilty for heating up the house yet.
I'm having brain freeze issues. I do this every season. Now I'm trying to plan and I coming up short. "What did I cook in the hot months?!!!" My menu planning needs to continue so I can follow my paper trail.

Hamburgers and fruit for dinner here.
OH and Jenn you need to start another thread about hot month meals since in Miami its always so hot that I dread turning on the oven. (Lots of crock pot and salads)

A hot month thread would be great! I totally despise cooking in the summer and I am afraid of our gas grill. (Go figure - I can drive nine hours in a single day on unfamiliar roads but I can't light a grill. How embarrassing.)
My family hates salad-only dinners, too, which makes things even more challenging.
BTW, I have no idea what I am making tonight. Dh won't be home but will want leftovers to take to work. Maybe a crockpot chicken something would work...

My dh bought a monster London Broil at the commisary the other day that we have to grill tonight. I think I'll marinade it in a Chipotle Key Lime sauce today. There's a salad needing to be eaten as well, maybe saffron rice and...???

Great idea, Jenn. Warm weather meals are nice.
I know that I should be making baked ziti (St. Catherine is my patron saint), we are having leftovers. Not very creative today.
But I did make a heart-shaped cake. Now to go and frost it.

Come on over Lara. I always make more than my kids will eat!
Here is an online copy of the recipe. I substitute matchstick carrots for the red bell pepper and usually don't add green onion since I rarely keep them on hand.

I think I want something over rice or mixed with rice.. but the dinner hour is so confuzzled tonight.. normally I just have dinner a bit late but if I do that dh won't get to eat (his vfd training was changed to tonight rather than Monday)
hmmm maybe I could do a sweet and sour something for over the rice.. have that warm in the crock pot and rice in the rice cooker.. that might work... thinking thinking...
