Irene posted this on a Thanksgiving thread. (Thanks, Irene! It looks like an easy recipe.)
I'm planning to bake it for Christmas day and was writing down the ingredients to get on my shopping trip today.
Can Irene or anyone tell me how many this recipe serves? Two large potatoes doesn't sound like it'll go far. I'm looking at having 15-20 people here for Christmas.

2 large Sweet Potatoes, about 2 ½ lbs.
1 cup Sugar
1/2 cup Evaporated Milk
1/3 cup Butter or Margarine, softened
2 large Eggs

1/4 tsp. Salt
1 cup firmly packed Brown Sugar
1/3 cup All-Purpose Flour
1/3 cup Butter or Margarine, melted
1 cup chopped Pecans
Cook sweet potatoes in boiling water to cover for 30 minutes or until tender. Let cool to touch; peel and mash potatoes. Combine potatoes, sugar, evaporated milk, softened butter, eggs, orange juice concentrate, and salt. Spoon evenly into 2 lightly greased 9-inch pie plates. Combine the brown sugar, pecans, and flour; sprinkle evenly over the potato mixture. Drizzle evenly with 1/3 cup melted butter. Bake at 350 degrees for 25-30 minutes. Makes 8 servings.

Cay dear,
At the bottom of the recipe you quoted above, it says it serves eight. Looking at the recipe, it is hard to understand how two sweet potatoes can serve eight though...

When I make a similar casserole I use 6-7 sweet potatoes and it fits in a 9x13 pan and serves about 8-10 people. I'm sure it would serve more than that for a holiday dinner, since usually there are so many other dishes.
I was at Super Wal-Mart today and they had sweet pototoes for .50/lb.!!

That's definitely a *duh* moment. I even double-checked the post before sending, thinking to myself, "It's probably right under my nose."
I swore I'd never proof my own stuff again.

Hi Cay,
I am just now getting back to the computer after a break for Christmas preparations and celebration. I hope the recipe worked fine for you. I usually ignore the 2 large sweet potato suggestion and instead use the grocery store scales to be sure I am buying at least 2 and a half pounds. Sometimes it really is only two of them! Since the recipe fills two pie plates, it really will serve 8 because each person would have 1/4 pie worth of souffle. In fact, during Thanksgiving and Christmas, when we tend to have so many side dishes to choose from, it will usually serve more people, because many people just take a large spoonful of everything.

It was delicious. My grandmother was sitting next to me at the table and said, "So you finally learned how to make sweet potato casserole."
The recipe was very simple.

I used two large cans of sweet potato and it filled the two pie plates. I included the pecan topping on one pie for those who wanted that. The other I left plain for the kids.

Dear Cay,
You don't know how tickled I was to read what your Grandmother said! I am a Southerner by adoption (I was born in New York City, but grew up in Virginia) -- and only by a hair (I live just below the Mason-Dixon line).
To think that a recipe that I provided could impress your Cajun grandmother just made my day!
