Does anyone know of a substitute that I could use in recipes that call for a cream soup? Preferably something I could do with a rice based substitute? (Can't have soy...)
For instance, someone around here loves Tater Tot Casserole. I am not sure how to make it so it would still work....

From LLL's Whole Food for the Whole Family:

THE UNCANNED CONDENSED SOUP
Basic White Sauce (thick)
3 T. butter or oil
3 T. flour
1/4 tsp. salt (or less)
dash of pepper
1 1/4 c. liquid, milk, or stock
1. Melt butter or oil in saucepan. Stir in flour and seasonings. Cook over medium heat until bubbly.
2. Add liquid slowly, stirring with wire whisk to prevent lumps. Cook until thick.
Makes 1 C. or 1 can of condensed soup.
Tomato Soup: Use tomato juice for the liquid. Add dashes of garlic and onion powder, basil and oregano.
Mushroom/Celery/Chive Soup: Saute 1/4 C. chopped mushrooms, celery or chives and 1 T. minced onion in butter before adding flour.
Cheese Soup: Add 1/2 C. grated cheese after the liquid. Stir until melted.
Chicken Soup: Use chicken broth for half or all the liquid. Add 1/4 t. poultry seasoning or sage.
Use any sauteed vegetable or liquid combinations you choose. Be creative - much better than store-bought soups. |

This is one I use;
1 cup milk (you can use rice or hemp milk)
0.75 cup cornstarch or arrowroot powder
0.25 cup chicken stock
minced onion, salt, pepper to taste
Bring to a boil stirring constantly until thickened. Substitute for a 10oz can of condensed cream soup.
I hope i have the proportions correct. I just wing it - and have not done it for a while. I will check with my friend who gave me the recipe - I am seeing her Thursday.

I do basically the same thing without a recipe.. so glad someone had a real recipe for you.
But I just wanted to mention.. green chiles, sauted onion a bit of cumin and oregano in the white sauce is a great sauce. I use it for creamy/white green chile/chicken enchiladas

Oh - I am desperately trying to figure out a way to re-work my old enchilada recipe, to make it dairy free, that DH will like just as much. It has 1/2 sour cream, 6-8 oz of Cream cheese, a few splashes of milk, and of course shredded cheese. It is so "dairy intensive." Anyone want to have a go? That sauce that Jodie mentions seems a good start!!

in that sauce.. make it with chicken broth not milk
add just a touch oof lemon.. it'll give it a sharp flavor similar to sour cream and go light on the liquid it'll be thicker that way.
the trick is going to be the shredded cheese..
why are you needing to go dairy free? sometimes depending on the problem, yogurt will work or goat milk based things rather than cow milk..
and no soy? I don't know if there's any cheese out there that would work..

I have a milk allergy. I had it when I was little, seemed to grow out of it in my teens, but it has returned with a vengence. So it isn't lactose, it is all dairy :( Even yogurt. I love yogurt.
I can do some soy, and may have to go with the soy cheese for the shredded. Soy just tends to make me a little nauseous. I have no idea why. When we get veggie burgers for the grill, I always have to get the ones that are almost all veggies, with a little soy. The ones that are mainly soy make me .
Now oldest dd seems to have a different reaction to dairy. She breaks out - bad - with rash-like acne (or an acne like rash) whenever she has dairy.
Now, I could make the enchiladas for DH just the way they are (they are sooooooo good) and just DD and I don;t eat any. Trouble is, we will. I know we will. And we will pay for it. (they really are good, you see....and we will succumb to the temptation... )
YOur sauce seems like an excellent starting point though!

Both my daughters get eczema from dairy products - but NOT organic dairy products in a moderate amount. It's the strangest thing, and really makes me wonder.
How about Rice Dream rice milk? I spent years on Rice Dream, and think it's quite tasty once you get accustomed to it.
There are some soy-free, dairy-free cheeses like:

Between our family of five, we can't eat soy, corn, peanuts, mushrooms, shellfish, wheat and non-organic dairy. Isn't modern life fun! I really believe if they stopped genetically modifying everything and pumping it all full of hormones and pesticides and such we would probably not have so many allergies. :)

Some of you may like to know that you can make the LLL white sauce recipe listed above very quickly and easily IN THE MICROWAVE! Melt the butter, stir in the flour, add the milk and toss it back in. Pop it out and stir once and then back in again. You have to experiment with timing and so on as I don't have ny idea of them but I do it all the time.
