In a few weeks I want to start preparing freezer meals for postpartum - does anyone have any good suggestions for meals that will freeze well for a few months. And any ideas for things for the freezer/pantry that will make postpartum easier (especially as at this stage I am not sure if I will be having a c-section or not). I have bought a whole stack of foil baking pans from Costco to store meals in and make clean up a breeze. Over the next couple of months I will be stocking up on paper plates etc. It seems very early to be doing this - but for the last few pregnancies I have had activity restrictions by 31 weeks. Of course this is probably going to be my full term pregnancy!!!

The last few pregnancies I have frozen about 30 meals before going in for the c-section. You can research the Once-a-Month meals for some great ideas also. I can't remember all 30 off hand, but here are some off the top of my head.

1. Tator tot casserole
2. Goulash
3. Chicken Tetrazinni
4. Hamburger Pie (Shepherd's Pie)
5. Chicken Pot Pie
6. Chili
7. Lasagna
8. Chicken and Rice Casserole
9. Beef Stew
10. Taco Mac
11. Roast on top of potatoes and carrots
12. Meatballs
13. Chicken Enchilada Casserole
14. Crab Shells

Here are my freezer meals from the last pregnancy (the list was still hanging on the inside of my cupboard )

3 x Chili
3 x Poor Man's Casserole (ground beef, veggies, mashed potatoes on top)
3 x Chicken Enchilada
3 x Baked Ziti (pasta with sauce and cheese----simple!)
3 x Tamale Pie
2 x Chicken Marbella
3 x Chicken Paprika or Country Capt. Chx.
4 x Some variation of this egg-sausage-casserole

Lisa - that site is awesome - and the OAMC site that she links too. So many good ideas.

I will spend the next few weeks making lists for my coops and grocery stores - so that hopefully in April I can have a few cooking days.

Does storing in freezer ziplocs work well?

Just an aside:
My criteria for these meals is that there be pretty much no prep nec. besides thawing out and baking. Since the goal is for others (my oldest and hubby) to be able to handle these meals on their own. So, the 9x13 pan-meals are what I do.   Your dc are older, so maybe not such a big consideration. With ziplocs, I get all kinds of quesitons....what pan should i use? which bag should i open first, how come this won't come out? etc....which drives me crazy, so I just want a pop-in-the-oven-meal.

Yes. This is probably the most space-efficient way of doing it.

Casseroles, using lots of bone stocks for the base. Something that is very nourishing and strengthening after birth. I usually make a chicken casserole (stock and sour cream for flavour) and a lamb casserole (stock and diced tomatoes for flavour), also, don't forget to throw in liberal amounts of dried stinging nettle into all your meals that you will be freezing and eating post partum, EXCELLENT herb for recovering from birth!
