I have never heard of a "breakfast" cookie...I am imagining that the other 33 women who have peaked at your post haven't either.

Are you talking about some type of oatmeal/granola type bar?

Or perhaps a type of scone or muffin?

Actually I thought the first time I heard about a breakfast cookie it was on this forum. I think they are some kind of oatmeal, granola bar things.

I have found some at allrecipesbreakfast cookies but the ones I tried were very dry. I was hoping for a recipe that would come recommended by people I trust

I have what I call "oatmeal bars".. I looked at recipes for oatmeal cookies and for baked oatmeal and came up with something that we all like that's not too sugary (the cookie though that's the texture I like) or slimey (my bias against cooked oatmeal ) It's more cake like than granola like.. but it's not too crumbly and everyone here loves it.. and it mixes up quickly. I can make it within an hour.. which means that I can often make it up easily the night before if we need a fast or take it with you breakfast. And it's quite flexible on flavors.

ah I see it's on the topic Angie linked to.. except that's the old way I did it.. I've changed the recipe some..

Quote:

1/4 c oil
3/4 c apple sauce
1/2 c honey
1 t vanilla
2 t cinnamon
1/2 t baking soda
1/2 t baking pwd
1/2 t salt
1 1/2 c. whole wheat flour
3 c. oats
1 c raisins (optional)

mix together and spread in a greased 9x11 cake pan. bake at 350 for 20 min


And I change this around a lot.. change the cinnamon, use different dried fruits or nute or chocolate chips, and I change the apple sauce.. like I'll do a lovely cranberry walnut version.. I get cranberry sauce and use it in place of the apple sauce and stir in dried cranberries and chopped walnuts

hint: if you double the recipe one regular sized can of apple sauce is close enough to the amount needed so you don't have it left over.

"Breakfast cookies" around here are muffin batter baked in a 9x13 pan and cut into bars.

Here's my basic muffin/breakfast cookie recipe:

1 C white whole wheat flour
1 C all purpose flour
1 C oatmeal
1 TBS baking powder
1 tsp salt
1/2 C sugar
1 - 1 1/2 C milk or juice
1/4 C oil (or peanut butter)
Up to 1 C additions (nuts, dried fruit, mashed bananas, pumpkin puree, grated carrot or zucchini, applesauce, etc.)
1 tsp vanilla extract
1 tsp cinnamon (you can also add ginger, cloves and nutmeg if you like)

For muffins bake at 400 degrees for 25 minutes. For bars bake at 400 degrees for about 45 minutes. Grease the muffin tin/pan first (these don't work well with paper muffin tin liners - too low fat, I think).

I just thought I'd resurrect this thread. I have also been interested in breakfast cookies and just found this recipe...Heavenly Homemaker Breakfast Cookie

I have no idea if I did the link correctly. Anyway, these are tasty and moist, although be warned they use a ton of butter (this blog seems to have recipes that are very Traditional Foods/Nourishing Traditions-based). I used mini chocolate chips and baked them on parchment. My yield was 18 large cookies. She also has a breakfast cake variation. Just thought I'd pass this on!

Natalia, I remember years ago reading some article on "breakfast cookies" that were about 300 calories each, high in protein, and were supposed to be really a great breakfast if you wanted to lose weight. Are these what you are looking for? I'd like to find a recipe for them, too.
