Can someone tell me about these Tuna Tacos that was on yesterday's thread? I'm thinking of Lenten Fridays coming up. Do you just replace the ground meat with fish or do you use a plank of fried fish in the taco?

Breakfast was a sort of custardy mixed berry cake. We haven't had lunch yet, but it'll be leftover cheese and zuchinni potatoes.

Fried rice with garlic, ham, and peas for dinner. Probably with spicy broccoli.

It's this casserole based really loosely on a Nigel Slater recipe for a zucchini-potato crisp. The original had sauteed zuchinni and potatoes under a cheese and rosemary crust. I saute (okay, now I nuke) potatoes, and saute some zuchinni. I cut up the potatoes, and fry them with the zuch for a minute, add half a cup or so of veg or chicken stock and a tablespoon of rosemary, stick it in a casserole dish, and sprinkle with cheddar and walnuts or pecans. Bake for about forty minutes. I use about equal parts zuchinni and potatoes.

It really doesn't sound as good as it tastes. If my husband didn't hate onions I'd add diced onion to the zuchinni. I've also made it with cauliflower. It's a good side or main dish.

Cay, I've done it both ways, I prefer grilled or blackened fish with refried beans and all the fixings in a soft shell but I think the traditional California way is fried with coleslaw. Try your favorite style of taco or burrito and sub in shrimp too - delicious!

Now I'm all hungry for Fish Tacos! We're going to have Portobello Burgers instead, though now I'm wondering if I could slice them up and make Portobello Tacos???

Re. the fish tacos, I have never had the real thing but my kids love fish sticks baked with some chili powder sprinkle on top, served in a crispy corn tortilla with shredded carrots, lettuce and a sauce made of a mixture of salsa and sour cream. Yuum!!
