Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Tonight I am going to use the rest of the Rotisserie Chickens from Costco for Chicken Pot Pie. I'll make a big green salad to go along with it.

Lunch-sandwiches
Supper- Company Beef, Rice, Kale

I may have to switch this though because I don't have enough rice. I hoping I can get to the store and buy some before tonight.

Company Beef is a new dish I'm trying. It's sort of like stroganoff.

Baked chicken (must bake or toss...)
Rice
Corn and leftover stewed zucchini (unless dh took it)

Lunch will be grilled cheese sandwiches again, I think. Not much food here and it is snowing or sleeting, can't tell which.

We're using leftover rotisserie chicken too - cut up and tossed with pasta, corn, chives, and olive oil.

French bread.

Lunch will most likely be leftovers from last night (Thanksgiving shepherd's pie)

Good question. We are trying to eat up the leftovers from the Spaghetti dinner the Knights had this weekend...but DH doesn't like the taste of the sauce...so it has mostly been the dc and I eating that.

I've got some thawed ground beef. Hm. I am thinking stroganoff.

I'm going to use that honey pecan chicken recipe everyone has been raving about with Mahi Mahi tonight...broccoli and cauliflower casserole, salad, and maybe homemade bread depending on how many people are fighting stomach virus today .

Breakfast - we had TJ's breakfast sausage links with TJ's wedge fries and OJ/tea to drink

Lunch - English muffin mini pizzas - with marinara, cheese and olives. Yogurt

Dinner - juicy burgers on the George Foreman with steamed broccoli and salad.

Tuesday is our crazy day with lots of out of home activities - so we need filling comfort food with little prep time needed.

I made a pot of white bean soup with a leftover ham bone last night. We ended up celebrating out to eat last night, so I'm serving the soup tonight with a salad, brown rice, and rolls.

The only thing that feels better than knowing what you're going to make for dinner (and have it defrosted already) is having it already made or already cooking.

I made oatmeal this morning and served a slice of toast with it. The girls do not love oatmeal, but I am determined that they learn to love it once a week at least!

For supper tonight ... I am not there yet.

Breakfast was quesadillas, eggs, bagels and cream cheese.

Lunch will be determined after the trip to Trader Joe's this morning.

Dinner is chicken breasts in sour cream sherry sauce, brown rice and green beans.

For breakfast, I had leftover kielbasa tossed with roasted new potatoes kale and olive oil - I don't know what everyone else had.

Lunch is grilled ham and cheese on multigrain bread with mustard and pretzels I think.

Dinner is Creamy Cauliflower soup from Pioneer Woman, garlic toast and salad. In laws will be here for dinner. Again, Abby is doing all of hte cooking.

My husband is out of town on an overnight trip, so I am going to go the easy route...frozen pizzas! However, I will increase the health factor by having a spinach salad!

We had chicken tacos with homemade tortillas (thank you MaryM.), rice, black beans and sauted red and orange peppers ... and of course, all the fixings for tacos!

Also, I made the Hillbillie Spagetti Pie that Mary Chris recommended, and my family loved it. Some like it even better than regular spagetti!

Lunch was southern fried chicken and peri peri chicken fillets with coleslaw.

either meatball subs, or smoked sausage and rice....I want the latter, the munchkins would prefer the former...

And an experimental dump-cake-like for dessert.

Tonight is Surf and Turf - it's my husband's birthday so we're having blackened bacon wrapped ribeyes with shrimp, cheesy broccoli, toasty oatmeal bread, and the piece de résistance...a fudgy slowcooker cake! It smells divine.

It only took me most of the day and dh's suggestion of pasta to figure it out

pasta with butter and garlic and basil
meatballs in bbq sauce
veggie (probably broccoli)
italian bread (I've got it resting now for a few more minutes before shaping it.. it normally is supposed to rise in the fridge 2-24 hrs which makes it great for making ahead and serving hot out of the oven.. but I've made it with practically no rise time and it still manages to be good )
