I am taking food to a potluck next Thursday and would like to stick with the party theme...someone's taking red beans and rice already...

I don't need recipes (I have about 100 cookbooks), just ideas. My brain has been fried by all the craziness at my house (guests during Inauguration, for one thing!), and I'm sure you ladies will be wonderfully inspiring.

What about roast beef po-boys...easy to do for a pot luck. SLiced roast beef in brown gravy, french bread, lettuce tomatoes, and mayo for people to "dress" it themselves (that's what they ask in New Orleans when you order a po=boy..."would you like it dressed?").
Cay's bread pudding recipe with rum sauce would be a nice addition.
Muffalettas....italian bread with italian meats...ham, salami, turkey, etc...provolone cheese and italian olive salad. These are taditionally served on huge italian rolls and cut into quarters.
Etouffe or shrimp creole are nice and make a nice potluck presentation when served in a bread bowl.
And since it's carnival season in New Orleans right now, I highly recommend King Cake...you can make one with any homemade cinnamon roll recipe, just braid it and make an oval instead or rolls, bake, glaze, then sprinkle colored sugars in purple, green, and gold (yellow) over the top.

That's what I was thinking, Natalia. You could do a turkey / chicken / sausage / ham jambalaya or gumbo and not spend too much money.

I made this this past Monday for my Louisiana History class and again Wednesday evening for the KC Family Night. Chopped up some ham to put in mine. The kids loved it.
