Tonight we are going to try Natalias' Taco Pie recipe. We might round it off with some rice. I still need to use up those granny smith apples, I suppose we could have two pies tonight.

LOL... I just came on here to see if Tuesday night meals was up and it just popped up!     We're having chili and biscuits. Which we were supposed to have on Saturday but my husband caved into the kids request for hot dogs. They hadn't eaten any since last summer.   Speaking of apples I have a bunch to use up too.

I'm going to try to extend the leftover white turkey chili. we had it with whole wheat rolls last night and fruit smoothies (pineapple,strawberry, strawberry yogurt, a bit of apple juice)
I think tonight I'll do corn muffins, and more fruit?

Trish,
My kids made an unusual request for hot dogs and Pringles the other day and since I was sick in bed, my husband caved in! What is it about this time of year that is making them crave hot dogs?

We are having homemade garlic chicken pizza. I do not make my own crust due to husband's IBS and because we really like Mama Mary's thin and crispy crusts.

Funny, my daughter just requested hot dogs and baked beans for lunch.

I'm looking for inspiration from you ladies today. I need something crockpotted, since we have a whirlwind afternoon. School pick up at 3:15, violin lesson at 3:30, back home by 4:30, back out for swim team practice at 5:10. Tuesdays are ridiculous.

Inspired by Carole's post yesterday, we're having a pork roast (crock pot)with mushroom gravy....some potatoes I read about in my German cookbook (they have horseradish in them..mmmm), probably some applesauce. Maybe a small salad, too (since we have some leftover from last night).

Tuesday is always crock pot night here. Although we no longer have a crock pot so it is going in the new cast iron dutch oven.

Beef (or I should say buffalo) vegetable soup and a loaf of whole wheat bread.

Mark ds-9 is celebrating his birthday today, so of course he gets to pick his birthday dinner. He wants TOMATO SOUP, but only the stuff from a can, with nothing else in it except round crackers-(ritz)--He specially requested that I do not make grilled cheese sandwiches with it, because that is so normal--he wants his dinner different!

We do get Oreo cake for dessert though--so that will make up for it.

I'm doing baked potato soup with turkey bacon, which the kids requested go on the menu rotation, and a tray with boiled eggs, pickles, cucumber and pepper slices, some lightly steamed broccoli, and maybe grilled chicken strips to offer some protein and veggies.

I'm just getting ready to toss stuff into the crockpot for Chicken Soup tonight before I head off for work. I was able to snag still warm from the bakery multigrain bread this morning and hopefully dd will remember to make her Kiwi Starfruit Salad tonight - yum!

Sure:

24 oz. carton small-curd cottage cheese
10 oz. pkg. frozen broccoli, thawed and drained
2 cups shredded cheddar cheese
6 eggs, beaten
1/3 cup flour
1/4 cup butter, melted
1/2 a chopped onion
1/2 tsp. salt
more shredded cheese to top each serving.

*I added more broccoli, 2 more eggs, and some chopped ham.

Combine everything in a greased crock pot, set on high for 1 hour, then stir and set to low for 2.5 - 3 hours.
