in american recipes, it often just says "flour" - what sort of flour? Here it usually says self-raising or plain, and I am confused. I mean in cake recipes - how do I know if they mean self-raising or plain?

generally if it just says flour.. they mean all-purpose plain flour. It's almost always specified cake flour (finer than ap) or self-rising if they mean those options.

Lucy, the recipes are referring to our plain flour over here. They do have self-rising flour, but most cake recipes use plain flour (although some finer cakes want cake flour).

If they want you to use self-rising flour, there probably won't be other leavening ingredients in the recipe (no baking soda or baking powder), as those are already part of the self-rising flour. So, whatcha bakin'?
