We got a panini maker for Christmas and are having SO much fun. The paninis we've made so far have been incredible. We've had ham, turkey, muenster cheese, and tomato - of course all "painted" with olive oil on the outside before grilling. Yum, yum!!

Now, I need to find a healthier bread than the process white italian I've been buying for the paninis. I also need to find some healthier meats than the nitrate-filled deli ham/turkey!

What are other good combinations for paninis? Especially meatless for Fridays??

What brand/model maker did you receive? I have been so tempted to buy one. Anyone have experience using homemade bread with it?

We make paninis on the George Forman grill, using whatever bread we have. Haven't found anything that is a really bad idea, so you're not stuck with white Italian bread. I agree with the cheese and tomato combo for a great meatless Friday sandwich. Have fun playing -- and please share your favorites!

Mine is a Breville and I LOVE it!

I haven't tried homemade bread yet but that's my next goal!
