Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I made fudge icing last night. I don't know if I didn't beat it long enough or didn't cook it right but....this morning I can tell it hardened just fine. Problem is is that most of it ran off the cake and I wound up just putting the left icing in the fridge. Now that I see that it will set up can I take that icing and reheat it and add some to the cake. There is just this very thin glaze on the cake. I froze the cake last night in quarters so I'm thinking I may even be able to split the layers apart????? I only need half a cake for Thanksgiving so if it doesn't work I'll still have enough lamely frosted cake for dinner. Any thoughts or suggestions. I really don't want to start over. :(

Rather than re-frosting the cake, perhaps you could serve the cake in a different manner...like thinning out and heating up the remaining frosting and drizzling it over the cake right before serving it. I make a white chocolate bread pudding that I serve with a warm white chocolate sauce that is really delicious.

However, with that said...can chocolate cake with fudge frosting ever be bad???

Have a wonderful Thanksgiving!
