I'm looking for pie crust and streusel recipes that are wheat (oats are fine), dairy, and egg free.
My son wondered if he could ever have pie. I'd like to try....

For streusel, we use oats, brown sugar, and cinnamon.
Could you just use a basic wheat-free flour mixture and shortening for the crust?

Angi, Truth be told, I don't bake wheat free. I have not found a good basic wheat free flour mixture that I like. Everything has been awful to me -- crumbly, tastes terrible, doesn't bake the same -- and so I don't even want to experiment in the wheat free department. I hate it.
I use the gluten free (and dairy and egg free) mixes. I've been very pleased with The Cravings Place and Cherry Brook Kitchen. My birthday cakes, cupcakes, cookies, etc. have all been successful. No more tears over birthday cakes. And the great thing about these mixes is they aren't full of chemicals -- I can recognize all the ingredients on the label.
The apple pie my mother made (and I make) has this kind of topping:
1/2 cup butter
1/2 cup light brown sugar, firmly packed
1 cup flour
(Mix together until pea sized crumb mixture)
So, I want to recreate that. Oat Flour? Margarine? Think it would work?

Have you tried Arrowroot powder as a sub for flour?
I like the flavor of arrowroot crackers, and I googled an arrowroot pie crust and came across this gluten free recipe that has arrowroot and other non-flour flours. http://www.wholefoodsmarket.com/recipes/recipe.php?recipeId= 853
I also have an apple/cranberry casserole recipe where the streusel topping is simply rolled oats, brown sugar, and butter or margerine (I think the original recipe said margerine though I use butter). It is tasty.

Jenn, I've made my sweetpotato pie recipe before with no eggs, no dairy, etc. You can just bake it without a crust... I'll post it ASAP. I use soymilk, non-dairy margarine and egg replacer.

Bob's Red Mill has a garbonzo bean flour that might work. I agree that gluten free cooking is gritty and unlike wheat flour, it is a learned taste.
We always used Crisco for the fat in a pie crust.

I am making a pie crust for the pumpkin pie using Midel ginger snap gluten free cookies. It would be made the same way a graham cracker crust would be made.
