..,that I had this past weekend at a fabulous Italian restaurant. The owner told me he could tell me the recipe but then he would have to kill me . My dd and I said, "If we guess correctly, will you nod?" he said yes, but we are missing 2 ingredients. He told me it is his mothers old family recipe so I'm guessing that we need to go with old, cheap, favorite herbs. I've already received the nod for basil and oregano. What other herbs fit this bill?
OK...tarragon? marjoram? thyme? (I don't think there was any rosemary, I can ususally catch that flavor.)
It's all going to come down to ratios too, but I think I can work on that. It was heavy on the oil (old recipe before everyone thought fat was bad) and very copious with the herbs. Any guesses?

I'm guessing that you'd also recognize tarragon. It's pretty distinctive.
Thyme is probably a good one, did you pick up any dill? My mom always puts dill in hers. Fennel?
Probably lots of salt and pepper! Lemon juice?
Have fun re-creating it!

I'd go for parsley and thyme.
I put garlic ground to a paste in mine -- I know some people use garlic powder... but then again that's not an herb

You're right, Melanie, about the tarragon...I LOVE tarragon...makes me think of a fresh pasta sauce with lots of fresh tarragon, garlic, and capers (where's the salivating emoticon?) No fennel - flakey herbs. Thyme and DILL...good guesses. I'm assuming salt and pepper, but it really didn't have a kick to it which I thought was unusual.
PARSLEY - of course! And, the garlic lover that I am , didn't notice garlic.
I'll report back, ladies, but it might take awhile.
If there are any other ideas, let me know. Thanks!

When I was a little girl (30+ years ago) my mother was given the "secret" recipe for the local Italian restaurant's salad dressing. It turned out that the secret ingredient was Accent (basically msg). It also contained olive oil, vinegar, basil, oregano, parsley, garlic powder, and a small amount of sugar. The dressing was amazing but I will never make it do to the Accent.

My mother's secret is a small amount of sweet and low, but it really doesn't make it taste sweet. It gives it a different flavor than sugar. Her mother used msg or some other similar sweet seasoning and this was my mothers compromise. She uses the traditional seasonings too of course.
