my kids like just plain cinnamon in the apple cider while it's heating.. not cooked too long or the cinnamon gets too strong.. just 1-2 sticks of cinnamon in 2 qts of apple cider.

But when I do something a bit more elaborate I really love using a small cloth bag to hold the spices so that it's easy to take them out for serving.

***OOOPS I missed the part about "non-alcoholic"!! Guess my recipe wouldn't help! But there was a scandinavian thing called "Groggi" (I think????) which you could mix with your own drink of choice.***

ooooooooh, brings back memories of "Gluwein" at the Christmas markets in Europe .

I made one for our xmas party last year that was yummy and actually liked by people (I don't think Americans are really used to the idea). I'll try and find it and post it later.

You also might be able to find it in a specialty wine shop and just heat it up.

I've seen recipes that say to use wine or apple cider.. so maybe that would work for any recipe?

Did you see in the latest Faith & Family a recipe for Christmas Cranberry Tea? I don't know if it was a typo, but it didn't really call for any tea, which made it appealing to me (I can't stomach tea). But I would substitute with cranberry tea bags anyway.

one version, but the magazine's version is closer to this one with cranberry sauce.

I love the going through the traditional recipes at Catholic Culture: Gluwein, Mulled Wine, St. John's Wine, Bishopswyn, Wassail, Glogg, etc. each with a proper spelling from their country (excuse the lack of umlauts, etc.)

Lambs' Wool is another one, and here is an alcohol free version.

If you can find bottles of alcohol free wine (there is such a thing) you could easily substitute.

My favorite hint is using the crock pot to keep the mulled beverage warm and serve from there.

non-alcoholic wines tend to be sweeter and lighter in flavor than the real thing.. you might get a better flavor with some juices.. like cranberry juice rather than red wine

We always make "Christmas punch" which is a recipe I got from a friend. It is one quart of apple juice, one quart of cranberry juice, and a cup of orange juice. (The original recipe had some sugar, too, but we omit this.) You put it in a crockpot or heat over the stove with 3 sticks of cinnamon, a teaspoon of whole allspice, and a teaspoon of whole cloves in a cheesecloth. (You should taste it occasionally, and not leave the spices in TOO long - more than a couple of hours - or it can get too spicy.) We this and have it often when the weather is cold.
